Bittersweet chocolate vs. semisweet for Passover cake???

The recipe calls for semi sweet, but I bought bittersweet by mistake. Can I use it anyway?

Hoppy Easter, Serious Eaters...

An oldie but goodie about what it's like to be a chocolate bunny...

Have a fun day!

I Hate Chocolate -- Anyone Else?

I never have liked chocolate. The darker the chocolate the more I dislike it. Needless to say, finding desserts I like is more difficult than I like since I have a crazy sweet tooth. However, I do admit I enjoy white chocolate...to a point.

I know I can't be the only person on Serious Eats who just can't seem to understand people's intense love for chocolate....

Favorite Chocolate Bar

When you get hit with a craving for chocolate, what do you reach for? I reach for anything by Ritter Sport, particularly the dark or milk chocolate with whole hazelnuts or the alpine milk chocolate. Oh, or the chocolate covered biscuit. What about you? Do you reach for pure dark chocolate? Milk chocolate? Something with nuts? Or fruit? Or will anything do?

My favorite Hershey's Kiss flavor is _____

Hershey's Kisses turned 100 years old back on 7/7/07, 80 million are produced daily and continues to be one of the most popular candies in the world. Flavors come & go with seasons & popularity...so over the years, what flavor has been your favorite...milk, caramel-filled, dark choc cherry cordial, mint...or another? btw...one Hershey's Kiss weighs in at only 26 calories...even Ed could work that in to his daily meal planning:)

best baking chocolate: what do you use?

i'm thinking about making some brownies, and i was wondering what everyone's favorite brand was, and also is anyone knew how schokinag rated against the other brands like schaffen berger.

Newman's Own Chocolate-Your Opinion

Earlier this evening, I treated myself (or so I thought) to a piece of Newman's Own (as in Paul Newman) Butter Toffee Crunch. While I like Newman's efforts and contributions to charity--and even his acting--I was not impressed with this chocolate bar. What do you think about Newman's Own chocolate? Is there one you would recommend--or is the packaging better than the product. Is Newman's Own chocolate just plain old chocolate?

What to do with cheap chocolate?

I received a bunch of plain Hershey's kisses from a well-meaning gift giver this Christmas. I'm a horrible snob about chocolate so won't eat them as-is, but I can't bear to waste food. Anyone have a suggestion for transforming these things into something delicious?

Really good fudge?

Does anyone have a really fantastic fudge recipe? I have my old standby but tasted some that a friend made and mine suddenly wasn't as good as I thought. Haven't been able to get her recipe and I want to make it this weekend. I like a very creamy fudge but without a super intense chocolate flavor, I wonder if I could mix milk and semi sweet/dark chocolate(try as I might, I still prefer milk chocolate over dark!) Thanks for any suggestions!

Got a better recipe for these chocolate pretzels?

Martha Stewart has a recipe for chocolate pretzels. Not chocolate as in the confection, but like a deep, rich chocolate cookie shaped into a pretzel. I was thinking that dusted with sea salt, they'd make an excellent holiday present.

Unfortunately the reviews of the recipe are terrible....tastes like flour....not much flavor...coloring not good. I'm only a holiday baker. I don't have the skills to improve upon it. Anyone have any thoughts? Can I simply take any chocolate cookie recipe and shape it like this?

Thanks for your help...the link is below.

Baking Chocolate

How many times can you melt and refrigerate good, semi-sweet baking chocolate? I over-estimated how much chocolate I would need for a faux-truffle recipe and now I have a container full of chocolate in my fridge that I'd like to melt down again, but I'm afraid that I'll end up with leftovers again (small fridge, not enough room for lots of little candies). Any info would be great.

Would you rather give up chocolate or cheese?

Ah, the power of both...I feel happily addicted. Chocolate is not a daily eats while cheese is a mainstay. Let's soften the question to---which could you give up for one year?

I suppose I could do without the chocolate, but don't you dare mess with my cheese intake!

What makes good chocolate?

Does this look like good stuff to you? It's 50% pure organic cacao - but it didn't taste great. http://tinyurl.com/2737m3

The best commercially available dark chocolate bar is...

So I need to pick up some dark chocolate bars for a holiday gift and I've always wondered what's the best. Unfortunately, ordering online isn't an option as I need it this week. Any nationally available brand is fine, but I'd also be happy with anything NYC-specific.
