Bread Baking: Peanut Butter Bread with White Whole Wheat

I've made peanut butter bread a number of different ways, but I didn't think about adding whole wheat flour to the recipe until recently. White whole wheat is the perfect ingredient, adding its own subtle nuttiness to the taste, and more texture as well. If you're trying to add more whole grains to your diet, this is a pretty unobtrusive way to get them in. Everyone will notice the peanut flavor and no one will notice the grains. More

How to Make Gluten-Free Sandwich Bread

Gluten-free bread. I'm the first to admit it suffers from a bit of a bad reputation. The premade loaves tend to be expensive and homemade recipes often are dense and fall apart when sliced. What's a gluten-free eater to do? Live without bread? My answer to that is an emphatic "No!" Gluten-free bread can be wonderful. For my first column on Serious Eats, I wanted to share my recipe for Easy Sandwich Bread. Let's get baking! More

Bread Baking: Malted Barley Dark Rye Sandwich Loaf

For this loaf, I used a pale chocolate malt. The grains smelled a bit like chocolate with a hint of coffee. One of my previous loaves used a darker roasted malt called Pearl Black that smelled very much like roasted coffee and had a much stronger flavor in the finished loaf. If you don't have dark malted barley, you could simply leave it out and use this recipe to make a standard rye. It will be a lot paler, and not as complex, but still a nice loaf of rye. More

Cook the Book: Bacon-Pimento Cheese Bread

Pimento cheese is one of my all-time-favorite desert-island foods, so when I came across this recipe for Bacon-Pimento Cheese Bread I was instantly in love. Incorporating all of the ingredients for pimento cheese into a loaf of white bread along with some crisp bacon seemed almost too good to be true. And of course, there was the even more intriguing possibility of spreading the bread with a little more pimento cheese. More

It's probably the simplest bread I've ever made, in terms of ingredients, equipment, and the amount of work required. If you've never made a loaf of bread before, this could be the gateway bread to lead you into the wonderful world of yeasty things. More

Bread Baking: Mega-Multigrain Bread

After making a few too many plain loaves of bread, I decided to go wild with grains and seeds. The resulting bread is a symphony of textures, with a nice crisp crust and bits of interesting things inside. This is also a very customizable bread. If you don't have one of the grains or seeds I used, substitute something similar. More

Bread Baking: Semolina Braid

Of all the crazy and random additions I've made to bread doughs, semolina flour is the one that has become a regular component in my breads. It makes the bread a very pale yellow color and gives it a richer flavor. The first time I used it, it reminded me of a bread my mother used to buy from a local bakery when I was a kid, and that I hadn't tasted since. More
