Upside-down cakes aren't exactly the height of fashion these days but after making Michael Schwartz's Mango Upside-Down Cake with Basil Ice Cream, I think it's high time they made a comeback. This lovely one from Michael's Genuine Food replaces pineapple with caramelized mango slices. More
There was nothing kitschy or dated about this cake, the flavors were complex and totally cohesive, delicious and surprising. For what ever reason pineapple upside-down cake has fallen out of fashion, I think that it's about time to bring it back. More

Flip it onto a plate and remove the parchment to reveal the beautifully fruit-studded surface. The blackberries I used gave this cake an almost stained glass appearance, with the juices staining the cake purple-black to a light lavender color, it was gorgeous. Oh, and it tasted pretty incredible, too. Just sweet enough to be a perfect candidate for some à la mode action. More
