For The Unofficial Mad Men Cookbook authors Judy Gelman and Peter Zheutlin have included a Lutèce classic, Gambas au Beurre d'Escargot, jumbo prawns gratinéed with a green garlicky butter spiked with licoricey Pernod. One might think that there are snails trying to sneak into this recipe, but it's just big sweet prawns cooked in the same butter that escargot are traditionally sizzled in. More

While we're pretty certain that there isn't a more dated vegetable out there than canned hearts of palm, there's something about this salad that feels quite contemporary. Peppery watercress, mild hearts of palm, and buttery Bibb are dressed with a vinaigrette that is packed with capers, bits of pickle, and finely chopped egg white to make for a salad that's not only tasty but quite nice to look at as well. Judy Gelman and Peter Zheutlin, authors of The Unofficial Mad Men Cookbook, adapted this recipe for Oysters Rockefeller from a 1977 edition of The Grand Central Oyster Bar and Restaurant Seafood Cookbook. Over the years the Rockefeller recipe used at the storied Oyster Bar has changed but this one is that would be the closest to the ones that Don and Roger enjoyed. More
