'Mardi Gras' on Serious Eats
For folks outside of New Orleans, the square, fried fritters which are covered (perhaps buried) in powdered sugar are probably most closely associated with the French Quarter's famed Cafe Du Monde, a coffee shop established back in 1862.
These "beignets" may not be fried, but the chocolaty chicory coffee makes them more than indulgent enough for Mardi Gras.
This version is a quick take on the cake, made with store-bought puff pastry. The filling is cinnamon-sugar, and as a nod to its Southern state of residence, contains bourbon-poached golden raisins. This cake calls for a dried bean to be placed, so warn your guests prior to biting in lest you want a king or queen with a cracked tooth!
