The flavor of this pudding changes dramatically depending on the ingredients used. Skim milk makes a pudding with the lighter taste and texture of the "low-fat" puddings where as whole milk gives the full flavor of the original. High end fancy cocoa powders like Valhrona will result in a really dynamic, flavorful chocolate pudding, whereas grocery store staples like Hershey's will have a simpler flavor more in line with the taste of the pudding you remember.

During the candy making process, this syrup begins to crystallize due to its instability. This starts a chain reaction that ultimately results in "defective," crunchy marshmallows. Terrible for s'mores and Rice Krispie treats, but a thing of beauty for cereal.
Making the hazelnuts into a brittle means every bite has a subtle crunch, but even after grinding in a food processor, lots of big, chunky hazelnut bites will remain. Don't hesitate to substitute corn syrup for honey if that's what you have on hand, or do so for a vegan variation. And as long as we're talking substitutions, you can use toasted pumpkin seeds and pumpkin seed oil (or another oil of your choice) to make a nut-free version, should you suffer from a nut allergy.
