'BLT' on Serious Eats
I love savory French toast. And when you combine salty, fried, eggy bread with bacon, tomatoes, and fresh, crunchy shredded romaine, you get a brunch that will set you straight no matter what you got yourself into the night before.
Let's say you want a BLT, except it's not quite peak tomato season and you only have a slab of raw pork belly, not bacon. That's the terrible dilemma I faced this week. But was that going to stop me? Of course not. I just had to get creative.
BLTs are one of my top restaurant orders: toasted bread, ripe tomatoes, refreshing iceberg lettuce, a slather of mayo, and a layer of crisp, greasy bacon. It can't be messed up, but of course, it can get a few alterations. Like candied bacon and tomato jam.
This BLT Bucatini from Domenica Marchetti's The Glorious Pasta of Italy is another fantastically quick pasta to add to your weeknight dinner artillery. The "B" here is really more like a "P," crisp slices pancetta, the "L" is peppery arugula, and the "T," tomatoes of course, and in this case, sweetly roasted cherry tomatoes tossed with olive oil.
I've made Kenji's astonishing replica of In-N-Out's Double-Double, Animal-Style so many times now that I can almost make it in my sleep. The burger already has lettuce and tomato, so what would happen if I got rid of the cheese, doubled the amount of tomato, and replaced the beef with bacon?
The only justification I have for desecrating BLT glory with avocado and shrimp is that it works. This isn't traditional or authentic in any way. To be honest, it kind of bugs me that I'd even enjoy something that messes with the holy trinity of bacon, lettuce, and tomato on bread. Why mess with perfection? But I do enjoy it. So here it is, ready to be scrutinized.
