Critic-Turned-Cook Takes a Pie-Making Class with Kate McDermott

[Photographs: Leslie Kelly] Wouldn't the world be a better place if there were more pie? No doubt about it. As a critic, I always wondered why dessert menus so often lacked this down-home treat. Maybe we're shy on hand-crafted pie because it can be such a challenge to make, especially if you're nervous around flour like I am. Cooking I can do, but baking is a whole different, kind of scary beast. At least that's what I thought before signing up for a pie-making class taught by Kate McDermott at Diane's Market Kitchen near the Pike Place Market. Kate's pie skills have been written about in Saveur. She's shown Ruth Reichl a thing or two, too....

Video: How to Make Charles Phoenix's Cherpumple, the Monster Pie-Cake

It was only a matter of time before somebody would come along with the dessert version of turducken, and that somebody was Charles Phoenix. Already known for his kitschy pop culture humor, Phoenix here creates a monster of a three-layered dessert where each layer (CHERry, PUMpkin, and apPLE pie) is also baked inside a cake mix (white, yellow, and spice, respectively). Judging by the faces of the mechanics who got to try a freshly-baked Cherpumple (fresh from a pink vintage stove at The Antique Stove Shop in Ventura, California) it's sure worth a try. And if one of those pie flavors just ain't your thing, think of all the possibilities—like Cherpumpbarb (with rhubarb!). Watch the video, after the jump....

Video: Chez Pim's Super Easy Pie or Tart Dough

"Everybody should have a go-to pie dough or tart dough that they do in their sleep," says Pim Techamuanvivit (aka Chez Pim), who recently came out with a cookbook called The Foodie Handbook. Here she shows us her go-to, which really does look ridiculously easy. Making a pie crust from scratch always sounds intimidating but this approach is more like playing with Play Doh that happens to turn into a deliciously flaky, buttery crust. Do You Like Eating Pie Crust By Itself?

I asked this question because when I eat fruit-filled pies with my mom, she'll forgo the filling, but eat the crust with gusto. "Why don't you eat the filling?" I asked. "It's too sweet! I like the crust more." I apparently need to get or make my mom a pie with filling that isn't swimming in sugar. She isn't content with eating a crust on its own; she likes it to have that slick of sweetness from the gooey filling.
