But what really compares to a perfect pumpkin muffin? Especially one that is warm and spicy and slathered with cream cheese? Though adorable at first—because the only thing cuter than muffin tops are mini muffin tops—they fail at life. Flat and poof-less, they're not even trying hard to be authentic muffin humps. Stick with the left side. The four stuck-together "tops" come in both blueberry and chocolate-chip varieties. Waiting for them, you smell that familiar Eggo aroma and think, how bad can toasted, not especially healthy breakfast treats be? "Best Part of the Muffin," advertises the box. So true, you think, recalling the famous Seinfeld episode when "Top of the Muffin To You" dumps all the rejected stumps in front of the homeless...

Two 17-year-old girls were stopped at a Tesco in Exeter, England, after squeezing muffin tops (searching for the squishiest?) and apparently contaminating the poofs. "More like a fudgy cupcake than anything wholesome." I admit it. I was late to the Vitalicious game. Three years ago, a friend of mine who was completely obsessed with Banana Nut VitaTops asked me to go in on a bulk order with her. (A case of six assorted VitaMixes for muffins and brownies is $33.30.) I declined. I had only ever seen Vitalicious products at "supplement" stores like GNC. I didn't believe they would actually taste good anymore than I believed the berry-flavored SlimQuick powdered drink mix would actually help me drop five pounds. I'm going to make a confession: when it comes to muffins, I'm one of those really strange people who almost prefers the bottoms. Almost. That may explain my reaction when I received a pan that specializes in making just the crusty, puffy tops: "Mini quiches! Dainty gratins! Individual fruit tarts!" The possibilities offered by the large bake-able wells seemed infinitely more diverse than just muffin tops, and I eagerly started compiling recipes that would fit the mold. In an attempt to eat dinner before dessert, I started with individual quiches loaded with baby spinach, Swiss cheese, and turkey bacon. Have you ever had a good fat-free muffin? I'm not talking about one that was simply passable when toasted and slathered with jam. I mean a really excellent fat-free muffin: tender and moist with a crunchy, golden top, and brimming with juicy berries. I certainly haven't. To paraphrase the writer Phoebe Damrosch, author of Service Included, muffins are nothing more than an excuse to eat cake for breakfast.
