We've already had a string of exceptionally hot, humid days here in NYC, so the need for something refreshing and delicious that isn't necessarily boozy is especially acute. Limeade is just different enough that it seems like an impressive addition to a summer picnic lunch or dinner party, but is still ridiculously easy to make from scratch. Here are three fresh takes on limeade that are just as good as the original.

A full-bodied, caramely limeade sweetened with panela.
Black peppercorns are totally transformed when steeped in a simple syrup. Here, in a simple limeade, fresh-squeezed lime juice brings out the bright citrusy notes of the pepper and adds a nice kick.
Blending chunks of watermelon and giving it a quick strain through cheesecloth yields a sweet liquid that is a perfect foil for tart lime juice.
A sweetened, non-alcoholic take on the Raspberry Lime Rickey, fresh raspberries are pureed with lime juice and just the right amount of sugar. Serve ice cold, with a splash of gin or vodka if you'd like.
If iced tea and lemonade is an Arnold Palmer, then this shiso limeade is a Ryo Ishikawa. It's not until you mix the limeade into the purple shiso tea that it turns bright pink, just like the pH tests you did in elementary school with red cabbage juice and lemon.
Everyone knows about the terrific sandwiches at Cutty's. What doesn't get the chatter it deserves is the limeade. Maybe most versions aren't bad, but a limeade that nails the sweet-tangy balance is strangely elusive. I imagine most of what makes or breaks any limeade is all in the proportions, but owner Charles Kelsey has a few tricks that make his stand out.
