Pizza Flavored Steamed Buns: Stupid, or Genius?

At a convenience store In Japan, you've got a window full of rice balls in flavors ranging from pickled plum to spicy pollack roe, skewered beef guts or fish cakes simmered in broth, or—a relative newcomer to the snacking scene—Chinese mandou-style buns, commonly called simply man in Japan. The usual suspects are there—pork, cabbage, mushroom—but this time I was interested in the single neon-orange specimen with the intriguing name pizza-man. This, I thought to myself, has the potential to stagger me with its genius. More

My Pie Monday: Mikey K.'s Pizza Mexicana

[Photograph: Mikey K.] This entry would have been perfect for Fusion Pizza Week last week on Slice. Señor Mikey K. says: Hey Adam, attached is a photo of my latest homemade creation, Pizza Mexicana. I'm a lover of two things in this world: Pizza and Mexican food, and this pie was my ultimate fantasy. The dough is my own homemade recipe. I use Pillsbury Bread Flour, salt, fresh yeast that I get from a Polish bakery nearby, and, of course, NYC tap water. I let it rise for an hour at room temperature and then move it to the fridge... Memphis: Coletta's, Home of BBQ Pizza

Coletta's Italian Restaurant is supposedly the place where barbecue pizza was invented. It was also claims to be the oldest restaurant in Memphis, dating back to 1923, when it introduced pizza to the city in the 1950s, and was Elvis Presley's favorite pizza. I don't doubt any of the claims. Apparently when Coletta's started serving pizza, locals had no idea what it was or how to eat it. Only when they decided to top it with something a bit more familiar did the pizza take off. More

My Pie Monday: Kay Poterba's Naan Bread Pizza

[Photograph: Kay Poterba of Kaybeth's Kitchen] Kicking things off today is a naan-crust pizza from Kay Poterba of Kaybeth's Kitchen: Naan bread crust with torn bits of fresh mOOOt-suh-rell (mozzarella, *giggle*), heirloom brown tomatoes, and then topped off with homegrown basil. I heat the naan bread through on a grill and then add the toppings, let it sit on the top rack with the lid closed until cheese melts ... top with fresh basil and you are done! Thanks, Kay! You're the first MPM sender-inner to use a sort of "alternative" crust. Interesting. How does naan work compared to... More

Top This: How to Use Pea Shoots (Dou Miao) on Pizza

Known as dou miao in Mandarin, pea shoots got a flavor somewhere between peas and spinach and have a crunchy chewiness that's a dead ringer for something Italians are pretty dang familiar with already. "Hey, the texture of these pea shoots reminds me of sautéed broccoli rabe." And then my grease-addled brain instantly made the leap to ... pizza topping! More

K.C. Pit Master Making Smoked Pizza

The Wilmington Star News reports on a recent WTF pizza moment at the Currituck BBQ Classic in Corolla, North Carolina: When I heard [Chris] Marks say that at the recent Currituck BBQ Classic in Corolla, I thought, "He's smoking something." But Marks was serious. The owner of Kansas City's Three Little Pigs BBQ & Catering told me he simply places rolled-out pizza crust directly on the smoker grate, adds sauce, cheese and toppings and then bakes the pizza for about 45 minutes at about 275 degrees. The crust, he says, comes out cracker crisp, the pie smoky and flavorful. Related... More

Pizza Muffins: Pizza Snacks Kids Would Probably Dig

[Photograph: Pizza Making] I kinda love pizzamaking.com. The folks there get extra nerdy about dough and crusts and ovens and baking but then turn around and post something fun like this technique for pizza muffins: I've been thinking about these for awhile and finally gave it a try. Easy to do. Make your pizza, roll it up, slice and place in a muffin pan.I used a dough that's about 55% hydration. Overnight retard. It's easy to roll and shape. After rolling into a rectangle I sauced it and added pepperoni and mozzarella. You have to kind of figure the... More
