Mixed Review: Ad Hoc's Fried Chicken Mix

[Photographs: Lucy Baker] The country's gone mad for fried chicken and so far I've kept my mouth shut. Truth be told, I'm a bit of a hater. It all began back in third grade when my class had a family recipe day. I cast my vote for chocolate donut cake (so named because it was baked in a tube pan), but my mother insisted on making the fried chicken she grew up with in Virginia. I remember shaking the raw chicken pieces in a brown paper bag filled with breadcrumbs, and watching safely from across the kitchen as my mom dropped each breast and drumstick into a hissing pot of hot oil. The next day I carried a platter...

What's the Secret to Great Fried Chicken?

Art Smith's fried chicken. [Photograph: Erin Zimmer] Fried Chicken Recipes Art Smith's recipe » The Lee Brothers' recipe » Paula Deen's recipe » Edna Lewis' recipe » Chefs are paying more attention to fried chicken—the seasonings, 36-hour brines, air-drying techniques, and fancy bread crumbs. There really doesn't seem to be a downside of a fried chicken boom. But at the end of the day, is it really any better than Popeyes? We asked a few Southern food gurus for their secrets to classic fried chicken....

'Word of Mouth' Taste-Tests Reverse-Engineered KFC Recipe

"A single bite of the homemade KFC is enough. It's like biting into a dew-fresh ripe peach after eating a canned one. It's obviously the same thing but an order of magnitude better." Earlier in the week, the news splashed that a Long Island, New York, man claimed he had reverse-engineered the KFC's 11 herbs and spices. The secret recipe that Ron Douglas unlocked depends heavily on Accent, a commercial MSG-based flavoring. Everyone blogged about the discovery, but did anyone try it? At least one blog we read did. In England, Tim Hayward (above) of the Guardian's Word of Mouth went for it. But he went one better, asking Word of Mouth readers to help him come up with a...

In Videos: Robocop Fried Chicken Commercial from Korea (1980s)

This Korean brand of fried chicken is so good that Robocop will defy all laws of the physical world and burst out of your TV to get it. And then he'll steal your freezer. It'd only be better if he rode away on a unicorn. I'd buy that for a dollar! Watch the video after the jump....

Grocery Eats Goes Off on Popeyes Chicken Biscuit

Photograph from Beer and Rap on Flickr SergDun of Grocery Eats completely goes off on the new Popeyes chicken biscuit sandwich. Warning: He curses up a storm in this post, so it's NSFW (if you have prying eyes reading your screen) and not suitable for delicate sensibilities. I know I'm not much better because I f****** paid them to do it but still this is a waste. Yeah it’s good but they are charging you a service that could be completed with a plastic knife. I think it actually looks pretty good. Popeyes has great fried chicken and great biscuits. What's not to love? (Unless, of course, there's a mark-up for the assembly.) Photo of the Day: Shopsin's Taco-Fried Chicken

Kenny Shopsin doesn't make just any fried chicken; he makes taco-fried chicken coated in spicy buffalo wing sauce. And it's goooood. Random shards of tortilla chips provide pockets of crispy, corny deliciousness in every juicy bite chicken. If you can't make it to Shopsin's restaurant, try out the recipe at home. Now you have a use for those tortilla chip bits at the bottom of the bag. KFC Goes to DEFCON 1 to Secure 11 Herbs and Spices

The fried chicken chain wants to choke any attempts at theft by upgrading security, moving the "yellowing sheet of paper" the recipe is written on to an undisclosed location. "I don't want to be the president who loses the recipe,' KFC President Roger Eaton said. 'Imagine how terrifying that would be.'" Only two company executives (whose identities are also undisclosed) have access to it at a time. [via Ellit]...

Nas's 'Fried Chicken' Song

From left: Nas, fried chicken. As Alaina who discovered this via the Guardian, said, "I can’t believe I’m only hearing this song now." I second that. I guess that's what I get for sleepin' on the latest Nas album. "Fried Chicken" is the 11th track on the untitled record and features Busta Rhymes. Sample lyrics: After you shower, you and your Gold Medal flour/ Then you rub your hot oil for 'bout a half an hour/ You in your hot tub, I'm looking at you, salivating/ Dry you off, I got your paper towel waiting I keep going back and forth on whether he's using this as a sexual metaphor or truly rapping about fried chicken alone. I guess...
