Vegan: Beet and Citrus Salad with Pinenut Vinaigrette

Beets get their fair share of criticism from children and adults alike, and it's easy to see why if you, like me, were exposed to the canned variety as a kid. Those things are not easy to like. A freshly roasted beet, on the other hand, is something quite different. Sweet as candy, rich and earthy, with a great sorta-soft-sorta-crisp texture, they're one of my favorite vegetables to work with. I make some variation of this salad a few times a year and it's one of my wife's favorites. Just like her, it's pretty, colorful, and best served at room temperature.

In Season: Arugula

Move over, iceberg. Beat it, Boston bibb. Arugula, with its artistically-shaped leaves and peppery flavor, packs quite a flavor punch into each bite. You might also recognize it under the name rocket, a derivation of the French roquette. Originally grown in the Mediterranean region, these days its popularity has grown. While frequently grown in parts of Italy, it can be found all over the world, and used in a variety of international cuisines, including as a digestive alcohol.

Blogwatch: Caramelized Onion and Arugula Pizza

Pete of Pete Bakes! uses a dough recipe from famed baker Peter Reinhart to create a tasty pizza with caramelized onions, white sauce, mozzarella, and arugula. He doesn't just stop there but also makes versions with lightly fried and crumbled Italian sausage, sun-dried tomato and basil, sausage and pineapple, etc. There are so many variations; just throw on whatever you have leftover around the kitchen. Why Do McCain's People Need to Hate On Arugula?

©iStockPhoto.com/YinYang When the Obama campaign attacked John McCain for owning seven houses, McCain's people returned fire, calling Obama "an arugula-eating, pointy-headed professor type." We've now moved from the "What's the matter with Kansas?" to the "What's the matter with arugula?" phase of the presidential campaign. If McCain had asked his wife, Cindy, or his blogger daughter, Meghan, I'm sure they would have explained the many benefits of eating arugula. As Christopher Beam wrote on Slate, arugula is "tasty, healthy, popular, American, and an aphrodisiac." It is said to be used extensively in Republican-leaning country club dining rooms all over this great country of ours, and even more important, it is readily available year-round in every area of the country...
