I've been mulling over this post for a while, waiting for my boiling rage to simmer down into something resembling calm reason. But at this point, it seems unlikely that such a day will ever come. Because here's the thing. Getting your pizza to go in a bag just plain SUCKS.
'Pizza My Mind' on Serious Eats
The proliferation of sit-down restaurants that serve quality pizza by the pie has many Americans confused. There are the people who are used to ordering at slice joints, where one to two of the large slices per person seems to be the norm. Then there are the people who are used to ordering crappy take-out, where the pizza comes so loaded and stuffed with cheese and toppings (not to mention the 5x height of the dough) that only the most aggressive eater could, or would want to, make it through a whole pie alone. But thin crust pizzas with delicious, fresh, restrained toppings? I'm down with one pie per person, at least.
There's an extra thrill that comes with discovering really good pizza in surprising places.
You never know exactly when or where you'll run into them, but you know that they will appear in your life. At times, you may go for months without seeing one.
