I regard Week 1 of my diet as a success, but it wasn't easy. It's obvious that I need every bit of the encouragement and assistance all of you have been offering me. I'll be checking in with all of you every Thursday to give you a diet update. As Serious Eats I find myself confronted by temptation at every turn. Yesterday, for example, the Serious Eats crew decided to have a mess of Korean fried chicken delivered. So Serious Eats overlord Ed Levine is on a diet. Which kinda blows for the rest of us here in the office because it means the days of "Oh, I just stopped at the bakery on the way in and picked up one of everything they had" are over. That's why I'm supporting Kevin Weeks (right, proprietor of Seriously Good) in his (good-natured, I think?) blog war against Ed: So over the next 12 months I will tempt Mister Ed Levine with sandwiches. Sandwiches he, the fancy New Yorker, can’t possibly duplicate or, if he does, will be bad for his health. I, too, am risking my health in this culinary Russian Roulette, but I'm confident that I will prevail...

This week's Cook the Book recipes are from The Young Man and the Sea, the cookbook I wrote with Dave Pasternack, the chef-partner of Esca, a southern Italian seafood restaurant in New York City. Dave knows more about fish and fish cooking than anyone I've ever met. I even caught my first fish, a 20-pound striped bass, with Dave's help. What's great about Dave's recipes is how much passion he brings to his food and how simple the recipes are. All you'll need to cook from The Young Man and the Sea is a good fishmonger, a grill or a fry pan, and a cold beer or a glass of wine. The first of those recipes will be along shortly....

I think our Serious Eatin' overlord, Ed Levine, may be too embarrassed to post this, so I will. Last Friday, just as we were packing up and about to leave the office for the weekend, a messenger arrived with a delivery for Ed. Prominently bearing the Sullivan Street Bakery logo, it was loaded with bread, a handful of Band-Aid strips, and a note: "Hope your thumb feels better," proving that its sender, Jim Lahey, is not only a whiz with bread but also has a good sense of humor....
