Our favorite red-headed Crocs-wearing chef's books are always gorgeous, but really it comes down to the fact that they work. And when we say work, we mean they produce consistently wonderful Italian fare that's rustic yet refined, bold, elegant, and satisfying in a deep and happy way. Cook the Book: 'Cook this Now'

The "now" part of Cook This Now stems from the fact that it's a cookbook organized seasonally, but unlike the countless seasonally-themed cookbooks out there, it takes seasonal cooking to a homier, more personal place documenting the meals that Clark makes for her family throughout the year. Before elbulli shut its doors back in July, it was arguably the most important and influential restaurant in the world. Reservations were made years out for a dinner at the famed restaurant in Roses, Spain. And while much has been written about dining at elbulli, the public knows relatively little about what went on behind the scenes. For instance, has anyone ever stopped and thought about what Ferran AdriĆ 's 75 employees sat down and ate before the restaurant opened for service each night? The first technique that Michael Ruhlman introduces in his latest cookbook, Ruhlman's Twenty is simply titled Think because in his words, "Thinking in the kitchen is underrated." Ruhlman wants us to stop blindly following recipes, in an A plus B equals C, kitchen robot kind of way, and start thinking about the hows and whys that make recipe work.
