Grilled Sausage Heroes With BUSH'S® Honey Chipotle Grillin' Beans

Searching for something to brighten up boring cookout sausages? Look no further than this recipe, which dresses up the standard grilled link with charred onions, beans, cheese, and scallions, all nestled in a toasty hero roll.

Of course, a good recipe is only as good as its ingredients. We suggest you start with your favorite type of sausage and par-cook the links in a mixture of beer and crispy grilled onions. This method will slowly and evenly raise the temperature of the meat, saving you from common sausage faux pas, like raw centers, dry meat, and burst casings. Once the sausages reach an internal temp of 140 to 145°F (60 to 63°C), you can take them out of the braise and place them over hot coals to finish cooking and get a nice char.

When they're done, tuck each sausage into a hero roll (we love pretzel rolls for this one), and top them with some of the beer-braised onions, sweet and smoky BUSH'S® Honey Chipotle Grillin' Beans, and a sprinkling of cheddar cheese. Then place the sandwiches back on the grill over indirect heat, just to get that cheese all melty and gooey. From there, finish them off with some sliced scallions, and you're ready to serve.

The best part about these heroes is their versatility. We tested the recipe with an assortment of sausages and loved every one. Our favorite was the bratwurst, but you could go with roasted-garlic links or even hot Italian sausages. Chicken and turkey sausages will work, too. You'll have enough variety to get through all your summer cookouts without one single complaint of boredom.

Grilled Sausage Heroes With BUSH'S® Honey Chipotle Grillin' Beans

Ingredients:
1 (21.5-ounce) can BUSH'S® Honey Chipotle Grillin' Beans, warmed
1 large red onion, cut into 1/2-inch slices, skewered horizontally
1 tablespoon (15ml) vegetable or canola oil
Kosher salt
2 (12-ounce; 336ml) cans any beer you like (or substitute 12 ounces chicken broth or water)
6 uncooked sausages (your favorite variety)
6 hero rolls, preferably pretzel rolls
4 ounces (112g) cheddar cheese, grated
1/4 cup finely sliced scallions

Special Equipment:
Charcoal grill or gas grill; chimney starter; instant-read thermometer; 9- by 13-inch foil tray

Procedure:
1. Light 1 chimney full of charcoal. When all charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil grilling grate. Brush onion slices all over with oil, sprinkle with salt, and place on hot side of grill. Cook, flipping occasionally, until onions have charred and softened, about 7 minutes. Transfer onions to a cutting board, remove skewers, roughly chop onions, and transfer to a foil tray.

2. Pour beer (or chicken broth or water) into foil tray with onions and place tray on hot side of grill. Nestle sausages in tray and cook until beer begins to simmer, about 4 minutes. Slide tray over to cool side of grill, cover, and continue to cook, flipping occasionally, until sausages register 140 to 145°F (60 to 63°C) on an instant-read thermometer, about 15 minutes.

3. Uncover grill, remove sausages from liquid, and place on hot side of grill. Cook, turning occasionally, until sausages are browned and crisp all over, about 3 minutes total. Place each sausage in a roll and top with grilled onions, beans, and cheese.

4. Place heroes on cool side of grill, cover, and cook until cheese has melted, about 2 minutes. Remove heroes from grill, sprinkle with scallions, and serve immediately.
