These bananas, shot by W. Paul Thomas, look like they're just at that stage I really like when I use them on PBJ-banana sandwiches and in my morning cereal. From the Serious Eats Flickr Group.

I like to peel bananas at this stage and freeze them. They have so much natural sugar and they make a tasty frozen treat when the temps soar, as they're already doing across a lot of the country. Frozen bananas taste a bit like banana popsicles, which my sisters and I fought over when we were kids. There were only two in a box and it got ugly sometimes. If only we'd known to freeze ripe bananas for the same (and healthier) effect.

My grandmother, God rest her soul, would never go near a banana unless it was just about all black and overripe. These are great dipped in chocolate, then frozen. They tend to be sweeter but if they're TOO ripe they'll fall apart....and you have Chocolate Banana Fondue!
