Cook the Book: New South Grilling
Inspired by tough-guy chefs like David Chang, Mario Batali, and Bobby Flay, men are cooking now more than ever. This year for Father's Day, why not skip the fussy cuff links, the itchy sweater vest, and the expensive golf equipment, and give Dad...a cookbook?
He probably already knows how to char a burger to medium-rare and blister a hot dog until its crisp and juicy. Now with New South Grilling by Robert St. John, he'll learn the secrets to preparing hearty, bold backyard barbecue favorites inspired by the vibrant flavors of the deep south. As the Executive Chef/Owner of the Purple Parrot Café, Crescent City Grill, and Mahogany Bar in Mississippi, St. John is at the forefront of cutting edge Southern cuisine.
Win 'New South Grilling'
We'll be excerpting a recipe from New South Grilling every day this week. In addition, we're giving away five copies. To enter for a chance to win a book for your own collection, just tell us in the comments section below: what food or drink most reminds you of your father?

Vegetarian Kosher Indian food.....my dad loves it.

Smoked oysters in a can - my dad, brother and I can sit around and eat two cans in 5 minutes, while my mom looks on with her nose wrinkled in disgust.
lo82070 at 1:53PM on 06/09/08
Whenever I see hot dogs, I think of a hot dog on a bun, smeared with peanut butter and covered in crushed potato chips. My dad used to eat them in the summer and I thought he was crazy. Then I tried it and discovered it's not that bad!
threedogkitchen at 2:02PM on 06/09/08
Macaroni and cheese with cut-up hot dogs - Dad's dinner of choice when he was in charge of the cooking. I realize now how completely disgusting that is, but when we were little, it was a favorite!
blgrimes at 2:04PM on 06/09/08
Many foods, we both appreciate great steaks, chili con queso from good Mexican restaurants, spicy pasta dishes. He's addicted to Malley's (Cleveland, OH) chocolates, and enjoys a big ice cream cone after a few rounds of golf!

Oooh, I guess I have two things. My dad's a 'drinker' - he really really really likes all the thin (brothy?) soups my mom and I make for dinner, to the point where we complain that he drinks all the soup without eating the stuff in it! My mom and I realized that there's no point complaining, so we just dump in a whole lot more water/broth in the soup to compensate for my dad's share. =)
The second would be Chinese takeout...whenever my dad picked me up from tennis games/practice on Thursdays when he took off work early, we'd just stop by and pick up some tasty teriyaki chicken, cashew chicken, and chow mein. It's something we both enjoyed!
uninorth at 2:10PM on 06/09/08
haha.. honestly, ramen .. my dad didn't know how to cook a thing, so when my mom was away, he would just make us kids ramen for dinner every day. :)
mrsbao at 2:16PM on 06/09/08
My Dad's signature dish - grilled hamburgers the size and shape of an adult male's fist (picture spherical and about 4" in diameter) charred to a black mess on the outside, untouched by heat in the center . We grew up with those just about EVERY weekend, every summer. Seriously, he NEEDS this book =)

I'm going to substitute my grandfather in for my dad, and say that it's good ol' Low Country cuisine- okra and tomatoes or shrimp and grits.

Roast chicken. My father can actually cook really well, and one of his favorite things to make is roast chicken. During the summer months, he usually cooks it outside on the grill, giving it a little smoke flavor.
In terms of drinks, one thing that's always puzzled me though is his devotion to Pabst. The man knows quite a lot about wine, and never skimps on a bottle. And he used to do a fair amount of home brewing. But for some reason he has very little interest in craft beers.
Nicholas H at 2:39PM on 06/09/08
grilled chicken wings.
Koren at 2:51PM on 06/09/08
Seafood gumbo. We were a Southern family, and this was my dad's signature dish. He made it just a couple times a year, but I can still smell that roux in the air and taste the okra.
krissyc at 2:53PM on 06/09/08
Ham salad
Dad cut the remnants off the Easter ham before mom made pea soup with the bone. He kept a hand-cranked meat grinder under the sink. He would put the ham through the grinder and combine it with pickle relish, mayo and mustard according to his secret recipe (which he made up as he went along.) He liked his cold ham salad sandwiches with beer. We got ours with root beer.
Robb Walsh at 3:07PM on 06/09/08
Scotch, and plenty of it.
Brownie at 3:09PM on 06/09/08
Liver and onions. Every once in a while my mom would make them for him. She thought they were disgusting and has a very sensitive gag reflex, so she'd often have to leave the kitchen in the middle of cooking them.
Tactful_Cactus at 3:19PM on 06/09/08
Borsht (sp?) with sour cream.
bessfour at 3:22PM on 06/09/08
My dad has totally mastered salmon chowder. It's amazing!!!
nichole at 3:33PM on 06/09/08
Pear salad. At every fancy dinner, my dad and I were in charge of making the salad course. My mother always expected us to grow up and make an elegant salad with baby greens and a homemade vinaigrette. That never happened. To this day, my dad and I always make pear salad. Put a leaf of iceberg lettuce on a plate, plop half of a canned pear (not a fresh one - the horror!) on top of the lettuce, fill the pear with Blue Plate mayonnaise, add grated cheddar cheese and a maraschino cherry.

smclean at 3:37PM on 06/09/08
Growing up my dad made terrible, dry hamburgers on the grill. However, in the past few months, he has gotten a new grill, even a new kitchenaid stand mixer. (you should have seen my jealous face when he opened that bag and pulled out the beautiful red mixer.) I think he would enjoy this cookbook as he is learning to cook.

my dad's favorite meal was our go-to meal in the summer when i was a kid: egg salad sandwiches & strawberry shortcake. sounds gross-but when it's 90 deg and 90% humidity-it works!
foodiemama at 3:54PM on 06/09/08
German food. Sauerbraten with ginger snap gravy, spaetzle, potato dumplings, potato pancakes, red cabbage. For the past 80 years our family have gathered every New Year's day for a traditional German meal. It has become everyone's (even the non Germans!) favorite meal of the year!
Although I've always helped out - the tradition was quickly handed to me last year when my father was in the hospital over the holiday. As hectic as it was (80 year family tradition + cooking for 30 people + no actual recipes + a little too much champagne the night before) it is one of my best memories in the kitchen & with my family.
For drinks, straight up Gin martini with olives. We tease that the reason I love olives (and gin for that matter) is because of all the ones I would eat from my father's martinis as a kid.

My Dad's famous Egg Nog (with Bourbon, of course)!! The last Christmas I spent with him, he made a BIG batch of it -- and no one was drinking it. So we managed to polish it off on our own ... and spend the evening laughing and giggling! We had a lot of fun ... and I'm GLAD that's how I remember our last Christmas together -- just the two of us being silly!

My dad was from Chicago and he used to make awesome homemade pizza. We lived in central IL and had no shortage of decent pizza to choose from, but he loved making it at home. He passed when I was 8 but I remember helping shred cheese (real whole milk mozz, none of that low fat crap) & stealing tastes of sauce. I bet my mom still has his old pizza stone.
Memories...

Arroz Dulce (Rice Pudding).
My dad is a good cook but usually my mom does most of the cooking in the house and my dad loves her cooking (its great). One dish they don't agree on is arroz dulce. Both my parents (and now I too) make Spanish-style rice pudding for holidays, family gatherings and occasionally on a whim but though the most health-conscious of the family Papi likes his rice pudding sweeter than the rest of us can tolerate, so sometimes he just makes his own, and uses a much more elaborate method than Mami and I.
Mami and I add the sugar, rice and milk maybe some orange zest, cook for 20 minutes, done. I'm not even sure what Papi's method entails, but the rice is cooked twice, and the milk is first flavored with orange peels and whole cinnamon sticks... Did I mention that Papi's motto is "If its worth doing, its worth doing right?"

I'd have to say popcorn balls, he made the best, I haven't found any that good since my childhood. Alas, he is no longer here to make them.
bb97036 at 4:44PM on 06/09/08
Grilled bologna. When I was a little kid, before my palate matured, my dad would toss a couple of slices of bologna on the grill because I probably wouldn't like whatever it was he was cooking for himself and mom.
feelgood at 4:47PM on 06/09/08
Hmm...a toughie. I would have to say anything "burnt". He has a tendency to burn everything (and admits it). Another were his infamous peanut butter and jelly sandwichs with a slice of cheese in the middle (Oh how I hated when he made my lunch when I was little). Also those small bags popcorn remind me of the times he took us to watch the Fireworks on the 4th of July.
mnsteph at 4:55PM on 06/09/08
Barbecue chicken. It is the only food I remember my dad cooking when I was a kid! He didn't cook much back then. He cooks much more now, and just got a new grill, so this would be perfect for him. Thank you for the giveaway!

I would have to say Hot Dogs. My father will go out of his way to have a great hot dog. He even went on a vacation with all the hot dog places he wanted to eat at on a map. I think he ate at 7 different places and kept the menus from them all. He loves hot dogs.
drala625 at 7:16PM on 06/09/08
my dad loved kiebasa. He liked it cooked with onions on a long roll. He would buy it from a german butcher who made it fresh daily and it was such a treat when dad brought it home.

Mom worked evenings leaving Dad home to tend to 4 boys. The man could NOT cook (not his fault, not many men in his generation could - he turns 68 in a few months) and the biological drive to survive led to me taking over the evening cooking duties. My wife credits this to the development of my cooking skills and the fact that she cooks a mere 3 or 4 dinners per month.
Dad does have his favorite foods tough, canned hash is one and Steak 'ems is another.

I grew up in Canada and my dad drank beer mixed with tomato juice. I guess that's the veggie version of a mimosa.
PageZ at 4:43AM on 06/11/08
Dad couldn't and can't cook but he could always make a mean cup of instant coffee followed by a lengthy cooling process so that it would be lukewarm (yuck!) by the time he drank it.
Oenonome at 7:03AM on 06/11/08
Grilled pork chops. My dad loves his grill.
idahomom at 9:20AM on 06/11/08
my dad hardly cooked anything but the sapporo ichiban ramen he cooked for me when i was 7 (in my memory) is the best tasting ramen I've ever had.. lots of egg, green onion, and COLD cooked rice for the soup leftover at the end...

My father, a New York Jew, travelled around the South opening fabric stores. I don't know what the cleaning people in the motel rooms thought of the empty bottles of herring in cream sauce they would find in the trash!

My dad isn't a cook by any stretch. But I grew up practically living off of his iced tea. I still can't make it like he does.

cochon at 1:40PM on 06/11/08
Junk food. My dad's the kind of guy who keeps stocks of chocolate, chips, pretzels, and all other kinds of junk all around the house and office, but it still all slim and annoying.
The next thing that makes me think dad is anything off the grill.
Stufsocker at 1:51PM on 06/11/08
Steak, hot dogs, hamburgers. Growing up, my dad would grill whenever he was home for dinner, no matter the weather. I remember him bundling up in a big down jacket and boots to go out and grill in the snow.

Egg omelet sandwiches! He did a quick 2-egg omelet in a tiny cast-iron skillet, put it on toast with mayonnaise and lettuce with salt and pepper. I still make these when I need a quick snack. There's something about that combination that always makes me think of my dad.

Tuna salad. My mom was forever making tuna salad for my dad as a kid and I thought it was the most vile substance in the world. Pinwheel cookies are a close second - were they around year-round, they might overtake tuna salad, but only being around at Christmas hurts their bid.
worldcupfever at 4:01PM on 06/11/08
London broil! Dad would slather it with yellow mustard and lots of cracked pepper, grill it medium rare, and then slice it very thin. On the side, he'd serve grilled Italian peppers and tomatoes. So simple and delicious!

My father was definately a foodie before the term was coined. He was in the restaurant supply business and as a result we were exposed to many and varied foods throughout our childhood.
Occassionally there came through the door a food so disgusting (to children) that I just wanted to puke.
Two of them he 'made' us try were tomato aspic and orange marmalade. To this day I can't see, hear of, smell or (ewww) taste either of these without thinking of him.

raych at 9:49PM on 06/12/08
Rice. My father can eat cups and cups of rice with any meal. After meals he can often be heard saying, "It would of been better with some rice." or "This could also go with rice, right?" And at the end of the meal, if you're lucky, he will flick a rice ball* at you.
*A little gray/blue ball of rice he's secretly rolled between his fingers under the table.

Sh*t on a Shingle. My mom mostly did the cooking, but very occasionally, my dad would get a late night craving for this dish, which I think he picked up when he was in the Army. My mom refused to make this for us kids, so if he wanted it, he had to make it himself.

Actually 3 things:
1> Popcorn on the stove with tons of seasoning salt. He made this several times a week after dinner.
2> Fresh peaches that he used to peel and put in the fridge with sugar on them. In the summer he would make us kids homemade peach icecream.
3> Hand-cut french fries with the skins on....YUMMY!
