Cook the Book: Grill Every Day

Book CoverOnce again, this week's Cook the Book selection focuses on grilling. But with temperatures skyrocketing and the 4th of July right around the corner, it hardly seems like overkill. Besides, who ever really tires of charred chicken, smoky salmon, and crispy, caramelized vegetables? We certainly don’t.

Neither does award-winning food writer Diane Morgan, author of Grill Every Day: 125 Fast-Track Recipes for Weeknights at the Grill. Unlike other books on the market that approach grilling as a novel, only-for-special-occasions cooking method, Morgan demonstrates how preparing charbroiled foods can be as easy as ordering take-out or defrosting a frozen meal.

Along with the recipes, Morgan includes helpful tips for novice grillers on types of grills, cleaning methods, safety tips, and tools. Plus, there is a special Grill Planner chapter devoted to transforming leftovers from last night's dinner into tomorrow's lunch (Mustard-and-Rosemary-Crusted Lamb Steaks are incorporated into a composed Greek salad, cold grilled vegetables are tossed with penne, fresh basil, and Parmesan).

The good old Midwestern fruit "casserole" with whipped cream, blueberries and strawberries intricately arranged like the American flag on a sheet of vanilla cake. My godmother makes it every year. Sometimes, it's jello and not cake.

BBQ chicken using my grandmother's family recipe for the sauce: sherry, butter, lemons, and paprika. Unexpected but the best grilled chicken you'll ever have.

Red, white and blue cobbler (but it always turns out bluish-purple!): raspberries, rainier cherries and blueberries with a biscuit crust.

This year, homemade s'mores. That is, homemade graham crackers with homemade marshmallows and some kind of chocolate.

I started a new job this year, and we have a 3rd of July barbecue. I've gotten one vaguely derogatory "oh my god, you bake?" comment when I brought in cookies 2 weeks in a row, so I'm feeling the need to show off. You bet I bake, and we're not talking Pillsbury cupcakes here. (Although I'm pretty sure I'll end up making the red, white & blue Funfetti cupcakes - I have one friend that still likes them better than anything I make from scratch. Those just won't go to the office.)

Smoked chicken followed after dinner with s'mores over the leftover coals...mmmmmm.

We go to a potluck after the parade, so it has to be packed in a cooler. Usually we bring some sort of big sandwich.

Barbecued husband!

Just kidding. My husband did make himself the center of a rather startling conflagration several Fourth's ago, though, when he opened the lid of a barbecue grill and was confronted by a flaming ball that singed his eyelashes and earned him the nickname "burnt toast."

Ahem. I like to make barbecued shrimp, prepared with a very simple olive oil, red chilli, and lemon juice marinade.

I love to smoke a bunch of little chickens for the Fourth. They taste smokey and moist and I love them!

my (immigrant) grandmother gave me two wonderful recipes: her trifle and flag cake (which not only works for the 4th, but also for the New Hampshire primary election as we did this year)

I throw a good old fashioned barbecue for a local non profit organization. It's a classic menu of hamburgers, sausage, chicken, hot dogs, grilled corn on the cob, potato salad, fruit salad, tossed salad and strawberry and blueberry parfaits for dessert. I also serve watermelon and iced tea or lemonade.

we're having our 10th annual 4th of july party....my daughters birthday is the day after so its a realy big cook out......the usual hot dogs,burgers,potato salad, corn on the cob,the best ever baked beans an usually barbequed chicken leg 1/4's....they cook up so well......this year me and my son in law are havin a bbq chicken throwdown....instead of renting a really big bbq,we're bringin our own an havin a chicken throwdown....let ya know how it turns out.....BTW i think i'm makin grilled jerk chicken !!!

It's gotta be, slow smoked ribs with my honey-bourbon glaze, and this year, I'm adding in some leg quarters with my own "jerk" sauce cut with orange juice and some corn on the cob tossed on the grill next to the sweet potato wedges waiting for their butter and spices! oh, yeah....and a nice cold Yuengling's if my brother-in-law would have remembered to stick a case in his trunk and bring it home!! dang.
