The first time I ever tried okra that I truly enjoyed was in a dish akin to this. It was an old Southern recipe / prep style: sliced fresh okra, corn fresh from the cob, diced red and green peppers, chopped onions and chopped tomato. It was all fried up in cast iron skillet with a bit of oil and some salt and pepper. And that's really all it needed. I like the addition of the baby spinach.
