'Top Chef': Things Get Sticky at Restaurant Wars
I have a feeling that Tom Colicchio regularly shows up at 5:45 AM in most of the chefs' nightmares. That said, at the beginning of this episode, well before the sun cracked the horizon, the head judge arrived loudly at the Top Chef barracks.
And if the pre-dawn wake-up call wasn't enough, Tom tells the six remaining chefs that their Quickfire challenge will be to work the egg station at one of Chicago's best-loved (and busiest) breakfast spots. Of course, in the hustle, I managed to miss the name of the place. Any Chicagoans? A little help in comments, please...
[Spoilers, over easy, after the jump.]
Helene, owner of the aforementioned yet unnamed breakfast joint, acts as the judge for this week's Quickfire. The task is simple: Grab an apron and deal with the breakfast orders as they come in. Whoever Helene would hire gets the win.
Antonia is first up. The orders come fast and furious. Antonia does her best, but it really looks like it's hard to keep up. Fast-forwarding through a montage of the other chefs, Helene looks stern and shakes her head frequently. We end with Dale, who, despite getting a slew of simultaneous orders, manages to hold his own and deliver successfully. Helene gives him high marks for grace under pressure. However, apparently Antonia's calm, cool exterior impressed the boss. She wins the Quickfire (her 4th) and is promised an advantage for the Elimination.
Tom Colicchio excuses himself to head to a charity event and gives the chefs an address where they'll find Padma and be instructed about their next challenge.
When the contestant arrive at a large warehouse, it's no surprise -- they're doing Restaurant Wars. Two teams of three. Opposite ends of the warehouse. One big kitchen for everyone.
Antonia's advantage is to get to pick the teams. She chooses Stephanie and Richard for her squad, which means the other team is Dale, Spike, and Lisa. Turns out it's a rematch of two teams from Wedding Wars. Each team has $1,500 for food and $5,000 from decor from Pier One.
On to the conceptualizing: Antonia's crew decides to go with a modern American "gastropub" theme. The name of their spot will be "Warehouse Kitchen." This is the first example of this team's cagey strategy of setting the bar very low. Antonia and Richard will share duties in the kitchen, although Antonia is officially at the helm. Stephanie will both contribute to the cooking and handle front-of-the-house duties.
The other team names their Asian-themed restaurant, "Mai Buddha." Lisa wants to head the kitchen, but so does Dale. After flipping a coin, Dale wins the job of executive chef. Spike is all too happy to leave some recipes behind with the Bickersons and head out to the dining room to be interior decorator and head waiter.
Shopping ensues.
Back in the kitchen, a few hours into the prep period, Anthony Bourdain walks in and announces that he will be standing in for Tom Colicchio during this challenge. After grilling each team on their concept and dishes, Bourdain announces that each team will get an extra set of hands. Four ex-contestants are trotted out: Mark, Andrew, Jen, and Nikki. Mai Buddha picks Jen. Antonia asks for Nikki to help them roll out handmade pasta.
Overall, Bourdain seemed equally impressed with the groups and their choices in the kitchen. He felt like Mai Buddha was being more ambitious with their menu, and if they executed well their meal would ultimately be more memorable. Again, it seemed like Antonia and crew flew below the radar. Bourdain even mentioned the fact that they were keeping expectations at rock bottom.
Slow and steady, apparently served them well, because the rest of the kitchen time was dominated by Dale, Lisa, and Spike pretty much unraveling. Sauces went south. Soups drowned in smoke. Sticky rice wouldn't, um, stick.
That last moment was when you knew, instantly, which team was doomed. Top Chef truism, number 17: When your sticky rice won't stick, you are pretty much screwed.
The dinner service did nothing but confirm what had already become apparent in the kitchen. The judges mooned over Kitchen Warehouse's dishes, almost unanimously, noting that Stephanie's pasta dish was close to perfect. Seems like the group effort in the kitchen really paid off.
On the other side of the warehouse, thinks were bleak from the very start, when Bourdain started cracking wise about the Buddha crew's choice of metallic purple linens. Little did he know that the color scheme might have actually been the highlight of the meal. Lisa's Shrimp Laksa, which Bourdain had been excited about in the kitchen, met with little or no approval to start the meal. The praise, when it arrived, was muted, such as Ted Allen's comment that the fried dumplings were nicely browned.
Happily for Lisa, Dale joined her in the doghouse when his signature dish -- Scallops in Butterscotch Sauce -- frightened and dismayed the diners in both concept and execution. And just when you thought the judges were done one-upping each other with their criticism of that entree, out came Lisa's Mango Sticky Rice. Bourdain pegged it as "baby vomit with wood chips." Ouch. But the really telling part of that statement was that Bourdain was so turned off by the dish that he couldn't even enjoy the put-down. He said it with a genuine air of exasperation and disbelief.
Back at Judges Table, the victors were loudly and thoroughly applauded. Stephanie is given top honors for her pasta dish and her part in conceptualizing the whole "gastropub" theme. She gets hugs from her teammates and a trip for two to Madrid. Buen viaje! How many wins is this for Stephanie? Plenty. She is the most understated front-runner, ever. You have to love that. And has there ever been a chef as well-liked as Stephanie? Even Harold from Season One could get a little intense from time to time, despite being an all-around nice guy. Good luck in Puerto Rico, Stephanie. If you don't make the final four, I'll eat my hat with a side of rancid avocado sauce.
Speaking of which, the Mai Buddha crew faced the judges with exactly the kind of acrimony and mutual recrimination that we've all come to expect from them. Spike got the genius-of-the-week award for choosing to stay in the front of the house and out of the kitchen. He got a free pass because he clearly couldn't be blamed for how bad the food turned out.
Then we have Dale and Lisa. To her credit, Lisa took complete responsibility for destroying the Laksa, which Bourdain was so ready to love. She still tried to make some excuses for it, but they didn't involve her teammates and throwing them under the now-legendary Top Chef bus.
Dale managed to keep his cool for what appeared to be 60 seconds or so, before opining that Lisa was back-talking and undermining him at every turn. Taking the high road is probably the only viable escape route for the executive chef on a losing team, and even that path often leads to the nearest exit. Still, when you are in charge and you start taking swipes at your crew, it never makes you look good.
In the end, Dale's bad leadership, lack of collaborative spirit, and what I assume was a nearly inedible candified scallop dish was more than enough to get him the boot. Sad for Dale, who clearly had talent, if not the proper temperament. And isn't it just a little amazing that Lisa and Spike continue to dodge the Top Chef shepherd's crook? Can anyone remember the last time one of them cooked a dish that people really liked? I know I can't.

It made me mad that Dale was chosen to go home, with his teammates (Lisa) saying he didn't show good leadership skills. Didn't he tell her more than once that her dish tasted like smoke? And wasn't that the complaint from the judges? If he tries, and you don't listen, it is no one's fault but yours. Sourpuss. Hopefully it is Lisa next Week, then Spike, with Richard taking the whole thing.

No way did Dale deserve to go home! It should have been Lisa -- hands down.
What were those judges thinking?
I am so ready for either Spike or Lisa to go. It is an atrocity that THEY are still there while Jennifer and Dale are gone.

Those TV morons know what gets ratings, conflict and drama, that's the only explanation I can think of for why Lisa's still there, cause it sure ain't for her cookin' and pleasant demeanor.

Lou Mitchell's was the breakfast restaurant. They give you donut holes while you're waiting in line. They give women and children small boxes of Milk Duds too. It's near the Sears Tower.

It is disappointing that Andrew left last week and Dale this week and Lisa and Spike are still there. But that is what the producers want, crafting, shaping the drama as the show is entertainment. I think the producers made the decision that Andrew and Dale were ultimately not finalists and that drama was more important than talent. It would have been interesting to see Andrew there instead of Spike. Spike cooked nothing and is just a master of sucking up to the producers. I think the producers are infatuated with Spike this season the same way they were infatuated with Sam from the other season, and I still don't get it. Or if Lisa was gone and Andrew was there, I think Spike's lack of talent would have stood out like a sore thumb. And in this episode Dale did all the cooking and Spike cooked nothing, in previous episodes people have been sent home for not cooking. But I really don't care for the nasty attitudes and really wanted to see some fresh ideas and earnest cooking. Unfortunately, that is not what the show is about. Yeah for cooking blogs!!!!!!!!!!!

@Judy, they used Spike's recipe but I think that was all of his involvement, the judges thought that was the "highlight" of their meal, if I remember correctly.

Lisa is excuse after excuse after excuse. She's a terrible cook. She should perhaps be cooking for that Diner for a living (during quickfire). She makes mistake after mistake. But! Dale was the exec chef, and just like last year when Tre got the boot. Phenomenal chef. But the buck stops at him. I think it is safe to assume that in the coming years precedent is in fact set. If you're the executive chef during restaurant wars, your neck is on the line should you lose.

I can't handle it anymore! But, those two hacks are gonna have to cook something next week which they cannot hide behind. If only there were two eliminations next week. Lisa and Spike are just horrid!

Also - was it just me - or did you all have no problem with all the breakfast slang the wait staff used? Over easy - over hard - etc. Serious what about breakfast slang do CHEF's not know? And I found it fall down hilarious that Lisa messed up the rice. TWICE! Please GO HOME.

I really don't think that the producers wanted to get rid of Dale or Lisa at this juncture. They consistently provide the most acrimonious drama on the show since Season 2 when the remaining contestants formed a vicious middle school-esque gang against Marcel.
If the producers really made their choices based on who had the most entertainment value, I think Spike would have been kicked off (since I can't see a situation where Antonia/Richard/Stephanie are going to be vulnerable against the likes of Spike and Lisa). Spike is gross and obnoxious, but he doesn't cause that much drama and is just annoying. I mean in this episode he weaseled his way in to the next round by intentionally AVOIDING drama.
Anyone who has seen earlier seasons of Top Chef wouldn't be surprised that Dale got kicked off. When you anoint yourself team leader, you immediately set the bar a lot higher for yourself. If you end up on the losing team, usually in the past, the only way you don't get sent home is if someone else screws up so egregiously that they shoulder most of the blame for your team's loss. While Lisa straight up failed at everything she made, Dale was a terrible team leader (he wanted to be team leader for his ego's sake, but then he essentially cared the most about his dishes and left everyone else hanging), in addition to making the wretched butterscotch scallops and verbally abusing the innocent waitstaff (Lisa deserved his verbal abuse). I totally agree that Lisa and Spike (and perhaps even Antonia) are far worse cooks than Dale, but Dale doesn't have the personality and leadership skills yet to be a chef and based on historical precedent and his pretty shoddy performance there was no way he wasn't going home.

This thing where they send the EC home even when they tried their best to make things right is getting old. In the real world, Dale would not be EC and Lisa his sous chef, because he would NEVER HAVE HIRED HER in the first place. He and Spike both told her repeatedly that the soup was too smoky, and she was either unwilling or incapable of fixing it. Ditto the rice. In an actual restaurant, Dale would have had the option of firing her and serving something else made from whatever ingredients they had on hand. But he can't fire her, and the only food they had to work with is what they brought back from Whole Foods. Oh well. Obviously Lisa or Spike goes next.

I think what may be lost in all the "Lisa must go!" hub-bub (which I heartily agree with), is that the remaining contenders: Antonia, Richard, and Stephanie are all pretty calm, cool, and collected. There was some drama from each of them early in the season -- Richard looking like he was going to try to be exceedingly precocious every week, Antonia dissing the hell out of Valerie, Stephanie nearly getting eliminated after winning the first Elimination challenge. Since about Week 4, all of these contenders have been getting along with the other chefs, producing decent if not consistently spectacular food, and staying out of the bottom three. Do you think that they have learned the tricks of Top Chef (unlike Dale) and are playing it safe? Or does it just happen to be their personalities that have them sailing through the competition? You can't really say that any of them are prodigies when it comes to the food. Or if they are, the producers aren't flaunting it.

Spike really annoys me. He is obviously really insecure, which is why he is always obnoxious and trying to be funny. I agree with Harold. The people on the winning team of Richard, Stephanie, and Antonia are all cool, calm, and collected. See how Antonia took those egg orders with grace? ? She has my vote!

What really bothers me about neither Lisa nor Spike going home last night is this: one of those bozos are going to make it to the top 4. When I think about the likes of Jennifer and Dale NOT making it to the top 4, it is just too ludicrous to bear.
My choice for the final three are definitely Stephanie, Antonia, and Richard, with either Stephanie or Antonia winning it all. It's time for a female Top Chef! (Note: I am not holding my breath waiting, however....)

I sort of agree, but by choosing to be EC, you are putting yourself in a position where the food you make is not the only factor that you are judged on. Dale, failed in both the food departments and the leadership roles.
Yeah, but Dale did actively push to be the EC this challenge, even though any idiot could see that his team was going to lose. Obviously anyone with half a brain would have fired Lisa on the spot, but by pushing so hard to be EC, Dale in effect "hired" her. If he didn't want to hire her he should have let her take control and taken her place as the sous. It's much better to be a sous chef with an idiot EC because you just have to do your job well, no matter what you are asked to do. The outcome of this battle was a foregone conclusion as soon as the teams were picked. Dale should have realized that he was never going to be able to keep control of Lisa and should have put his ego aside and let her throw herself under the bus. It was pretty clear that the reason he demanded to be EC was because his ego couldn't deal with Lisa bossing him around.
The thing is that Dale didn't comport himself as an EC should. Choosing to focus mainly on his own dishes instead of supervising, freaking out when his stuff went bad, abusing waitstaff, offering no solution to Lisa's, admittedly self-made crises, and letting Spike disappear for most of the prep time into the front room (how did Stephanie manage to conceive of a linguine and clams dish/bake a gorgonzola cheesecake AND set up the front of the house while Spike could barely even braise short ribs??? which is difficult, but does not require a ton of active prep time).
Yes Lisa screwed up hardcore, but if Dale wanted the EC job so bad he should have expected to have to clean up her mess. As EC, you get the power but you also have to take the responsibility for everything that comes out of your kitchen. He shouldn't be expected to hold Lisa's hand the whole way through prep, but if that is what needs to get done to make the service go well, then he needs to deal with it. Dale just wanted the power so that Lisa couldn't boss him around, but none of the responsibility. When it became clear that Lisa's dishes were awful (although its not as though his butterscotch scallops were any great shakes) he didn't care and just let her fail choosing to deal with his own messes instead. When you are EC, its your responsibility to take care of situations like that, even if you think the other person is an inept idiot. When you send out a nasty dish, its not some line chef whose reputation is going to be on the line, its yours.
While I think that Dale should have outlasted Spike and Lisa based on cooking skills and qualities to be a chef, I have to say that based on his human interaction and leadership skills, he was not yet cut out to be Top Chef and was less qualified than Richard, Stephanie, or Antonia for that position. He would make a great sous chef (he is possibly the best cook of the bunch), but he has constantly sucked when put in a leadership position, always choosing to take care of his own stuff before reaching out to the rest of his kitchen. Look at the difference between him and Hung. Hung was a conceited jerk that was socially awkward, but whenever he was put in an EC position, he didn't just see his "dishes" as the ones he prepared, but was constantly in everyone's face all the time making sure that his dishes were up to his standards. He was slightly immature and annoying about it, but at least he took charge.

I ate Richard's cooking two days ago. He deserves the win, for sure. He made great food, and was nice enough to speak to most of the tables that were there. Wanting a woman Top Chef for the sake of it being a woman is the same as voting for someone just because they are a woman, not because of their politics...
At chasgoose...Spike just gave the recipe, didn't actually do anything to the shortribs. Also, you went on for awhile about Dale not saying anything, but he did try to talk Lisa out of that smoky campfire mess. She is just too stupid to listen. (When even Spike is complaining about your dish, you need to throw it out and start over.) Oh, and that was not abusing the waitstaff. I have been abused much worse than that...that was just typical chef talk.

Bourdain said it was "baby vomit with wood chips" during the meal and at the judges' table said that on a diner's comment card the dish had been described as "baby food with potpourri"

I'm also surprised Lisa wasn't booted, her crossed arms and raised eyebrow show her lack of being a team player. I have taken the restaurant kitchen leap and know in order to keep things rolling smoothly communication with a co- worker is the key. I think she will go down soon.

Let start by saying I think Lisa is the Mike of a few seasons ago. How can someone so inept, unorginal, and lacking in any kind of skill still be in the competition at this stage of the game? She really is a snake who has little to no talent. If the trend continues the finale is really going be anticlimactic as Richard will pound the other finalist(s) into creative submission. I don't see how this won't be a Richard, Antonia, and Stephanie final. Some people may want a female Top Chef, but Stephanie has a severe confidence problem and Antonia can only seem to cook food that her daughter likes. I think Richard is thinking on a completely different level than the other two.
The only way they win is if Richard gets kicked off before the final. Judging by the last couple of weeks that may soon happen. It's shaped up so far to be "Top Finger Pointer".
