Photo of the Day: Empanadas in Chile

From April 13 to 19, I traveled around Chile with two other American food journalists on a culinary media trip. Here's another snapshot from that week. —Robyn Lee

In case you didn't know, Serious Eats' editorial assistant Robyn Lee is currently on assignment in Chile. She'll have more to report next week when she gets back, but for now, here's an example of some of the awesome food she's been eating down in South America.

I had the pleasure of doing two weeks in Chile and Argentina visiting wineries, and because it was a trade event, we were usually fed as well as wined. Everywhere we found empanadas. Nowhere were they alike, and everywhere they were marvelous. One of our group was a vegetarian, which meant we always had at least two types, one of which was meat-free, which made it even more interesting.

We also found that they were always baked, not fried, which I prefer. And as Mr. Meatloaf points out, it's another dish that everyone's grandmother made a little differently. Good stuff, and this from a former empanada-reluctant diner.
