Jennifer 8. Lee, author of The Fortune Cookie Chronicles, goes on the The Colbert Report to talk about the origins of General Tso's chicken. She also learns that Stephen Colbert eats an entire apple pie every day.

It's her middle name, not just her initial, but she includes the punctuation.

@kateeatsalot: Yes, her middle name is the numeral 8.

Wiki up: " She writes her middle name as "8." (with both the digit and the punctuation) on paper, but on her New York driver's license, it is spelled out as "Eight".... Many Chinese and Japanese names contain numbers written in characters. Lee's parents, who are from Taiwan, added the number eight (the Chinese character 八) to Lee's name while she was a teenager (presumably with her consent). For many Chinese, the number eight symbolizes prosperity and good luck."

Fuschia Dunlop has a recipe in her book, Revolutionary Chinese Cookbook: Recipes from Hunan Province for General Tso's Chicken (Taiwan and Hunan versions). I don't remember the background or story behind the dish, but I still thought it was a Chinese dish that has been altered a bit in the States. Yet, Jennifer 8. Lee says that General Tso's Chicken is not really a Chinese dish. I am confused.
