Cook the Book: 'Arthur Schwartz's Jewish Home Cooking'

20080317-arthurschwartz.jpgIf there are two cuisines Arthur "The Food Maven" Schwartz knows best, they're Jewish and Italian. He's already done an Italian book, so he tackles the likes of latkes, kreplach, knishes, and kugel in Arthur Schwartz's Jewish Home Cooking. If you're not lucky enough to have grown up with a bubbe fussing over you and cooking you some of the most amazing comfort food ever, then this book can help you approximate the experience yourself.

Win 'Jewish Home Cooking'

We'll be excerpting a recipe a day this week as part of our ongoing Cook the Book feature. matzo ball soup

salmon gefilte fish! YUM!

matza meal pancakes

Latkes, rugelach, challah, bagels... did I really have to pick just one?

Potato kugel, brisket, mushroom barley soup, and above all, bialys...I converted to Judaism and the food makes me even happier that I did!

challah bread

I would say noodle kugle (and how the hell do you spell that?), but the latkes on the book cover look so darn good. Oh, and charoset. Mmmm. A Hilel sandwich (matzah, charoset, and horseradish)... almost time!

Yesterday my fiance and I went for a late lunch at a Kosher deli in a neighboring town. He had pickled herring in cream sauce for his appetizer and it was delicious. I'll have it next time we go there.

barbequed brisket from Joan Nathan's "Jewish Cooking in America"
I make it for every holiday dinner.

oh, don't forget the chopped liver..........potato kugel, noodle pudding, challah, matzo ball soup
lox eggs & onions..........i could go on and on.

Noodle kugel and jam at Rosh Hashanah, matzah ball soup at Passover

I'm a fan of matzah ball soup. Honestly though, this is dish that can go really wrong really fast. I had one once that has the consistency of a baseball. The rest of the seder was actually really well done though.

I also really like latkes. I can't wait to make them for my daughter, she is going to love them.

gribenes?

also matzah ball soup with noodles

Potato Latkes with sour cream...also a good hand sliced Pastrami sandwich

I could never pick just one-latkes, sable, lox and bagels, matzah ball soup( I make it year round), rugelach...

definitely brisket. preferably made by someones mom.

Can't decide between latkes and mushroom barley soup!

matzo ball soup! oh, this is reminding me how much i love jewish food...so good!

challah bread

chopped liver!

matzo ball soup and latkes

I'm going to say latkes . . . but that's because I haven't actually eaten any other Jewish foods!

Obviously, I need this book!

This is embarrassing, but I think that gefilte fish are delicious.

Stuffed cabbage

Latkes, or maybe bagels?

Potato latkes!

challah...mmmm...

Bagels, definitely.

My aunt's chopped liver. Yum.

Matzoh ball soup is certainly way up there... somewhere with charoset and mondelbrot.

"Simply" tell you?

It isn't simple! I love latkes and tsimmes and gefilte fish and matzo ball soup and kugel (both potato and noodle) and blintzes and chopped liver and ruglelah and hamentaschen and brisket and mushroom barley soup and farfel and kasha varnishka and pastrami and what else have you got?

Latkes . . . yum!

Blintzes, Latkes and Rugelach tie the list and so many more make it a close second.

I love pretty much all Ashkenazi food, with the exception of kasha with varnishkes, but I have to say that the thing I crave most is Israeli shakshuka. ... Come to think of it, shakshuka's kosher l'pesach! Awesome.

comfort food: matzo ball soup and shakshuka. do pickles count?

I love kasha varnishkes, oh sweet buckwheat. Heh. But does my mom's brisket count as Jewish food? Because that would be my favorite.

toasted everything bagel with scallion cream cheese, lox, tomato and thin slices of onions

potato knishes

Latkes, all the way. Perferably fresh out of the frying pan, with a big dollop of sour cream.

Latkes, knishes, chopped chicken livers....yum!

Cheese blintzes

matzo ball soup, or my nana's blintzes..mmmm...

I'd part the waters for a potato latke any day of the week.

pastrami and extra-seedy rye bread.

Not having had much Jewish cuisine myself, I'll have to go with challah.

I adore kreplach. I make large batches to freeze. They're great to have on hand for fast, comfort food to relax with after a long day of studying.

Latkes. Yum!

My boyfriend just taught me how to make cholent this weekend, and I'm obsessed. But I also love latkes and bagels and lox.

matzo ball soup.

Latkes natch!

gefilte from Russ and Daughters. Chopped liver from Russ and Daughters or Zabars

lox on a bagel with a schmear...
and tomato and red onion

and a good babka for dessert with coffee

then a nap

Pastrami on rye with lots of mustard!

My favorites are brisket and soup mandels.

Forget the Latkes! Hanukkah isn't Hanukkah without Sufganyiot...

My mom's chopped liver and kreplach; my grandma-in-law's homemade gefilte fish.

Bagels with lox.

Bagels, lox, cream cheese. MMMM

Blintzes. Mmm.

Latkes, mushroom barley soup, brisket, tongue, kasha varnishkes and stuffed derma.

Definitely Latkes!

bagels with cream cheese, sliced tomato and sliced onion have got to be number one and I make a kittler Challah bread.

chopped liver

I'd have to say all of the above (except kasha - it escapes me, but I'm still hoping).

Challah (not holla). That was supposed to be funny.

my mom's sweet potato latkes!

I love latkes. they are a favorite in our house too

Bagels in any and all flavors.

stuffed cabbage and matzo ball soup.

challah or rugelach

mm...anytime my Jewish boyfriend makes corned beef...or challah french toast. =)

Kugel, rugelach, NY deli-style corned beef sandwiches...

kugels- luckshen, potato... so many ways to make them both!

Bagels are all I've ever had of Jewish food.

matzoh ball soup, *drool*

Challah Bread and Chopped Liver. Not together!

Potato knishes - just like my grandmother used to make.

Matzo ball soup - it's our chicken noodle soup.

Honestly, I can't pick just one favorite -- matzoh ball soup, bagels, latkes, cured fish, I love it all.

Blintzes. Or matzah brei. Or Passover sweet potato souffle. Or brisket. Or matzah balls. Um, I can't decide.

Bagels will have to do it, not much Jewish food in my life....

Have to go with Matzah Ball Soup with extra dill!

Latkes, definitely.

I am a bread lover! Challah bread is the best. Thanks,Cindi

my mom's weekly homemade challah is TO DIE FOR

I don't think I have had the pleasure of trying any of these foods yet but would definately love to win this so I can make and try each one of these dishes

bagels and lox or borscht.......

A knish for sure

Kugel! Sweet noodle kugel, especially. I am not Jewish, but my brother converted for his marriage to my sister-in-law. I got to cook the wedding luncheon, in the kosher synagogue kitchen, under the close supervision of the cantor. Made three kinds of kugel. (I had worked for a kosher caterer for a few years - it's not like they let just anyone wander in and take a shot at kosher food). It remains a favorite cooking memory of mine.

Latkes are a pretty close second, though! I can never decide between apple sauce and sour cream on top, so I go back and forth with each bite.

Tzimmis - really, meaty tzimmis, with carrots, sweet potatoes, prunes, etc. Nothing like it, especially for Passover.

Oh but for some stuffed derma - Mmmm.

I miss my grandma's cheese blintzes

Chicken Matzo Ball Soup

Love chopped liver!

chopped liver, yum.

Corned beef, hot pastrami, chicken liver pate', latke.

We used to have bagels (and bacon) after church on Sunday - and we got them at our neighborhood Jewish deli.

tsimmes or latkes, yum!

Latkes! Bagels! Matzo ball soup! You expect me to choose one?

noodle kugel

Our favorite Passover food is haroset. Definitely!

Mmmmm. Blintzes!

(or corned beef)

Vareniki/Kreplach.

Latkes, bagels, borscht, challah.

Yum!

No deli sandwich (Romanian pastrami on rye with deli mustard and a side of cole slaw) is complete without the grandfather of pickles, a Guss', a juicy sour, a tangy 3/4 sour, a crunchy half sour... or if you're really feeling brave, a pickled sour green tomato.

And if you can't find yourself a Guss', fahgedaboudit. Head over to the nearest appetizing store and get yourself a Brooklyn bagel with a schmear, pink, salty lox and a chub - a smoked whitefish.

Its a hard choice, but my moms blintzes just barely beat out her noodle kugel and brisket.

kugels, matzoh ball soup, matzoh brie, brisket, blintzes, smoked fish, bialies, gribenes, chopped liver, kasha varnishkes, tsimmes, rugelach, pletzlach, hot pastrami, corn rye....
AND: all the wonderful Sephardic/Mediterranean Jewish food!

Blintzes, challah, matzoh ball soup... all of it. Especially if my mother's at the stove.

kugel, warm or cold.

I've never met a stuffed cabbage roll that I didn't fall head over heals for. Of course, snacking on potato pancakes while the cabbage properly stews makes the wait well worth it. Don't spare the garlic.

Matzo ball soup is my absolute favorite Jewish food.

I love brisket.

noodle kugel

latkes with sour cream

bagels with lox and cream cheese

I don't know much about Jewish food, but I would love to try it. I love bagels.

Latkes with applesauce

Latkes, with both applesauce and sour cream.

Mmmm Latkes. Some with sour cream, some with applesauce.

Latkes - not to greasy please (meaning fried uncrowded and in properly heated oil in a heavy pan - cast iron is great here) served from pan to plate.

Blintzes are a close second, just edging out fresh-baked challah.

Really it's all of that along anything from Russ and Daughters here in NYC.

i have a serious thing for poppy seed hamantaschen (though my best friend's mum once made them with ollaliberries and they were pretty good like that too). also, israeli schnitzel with french fries, hummus, and salad is soooo good/immensely satisfying and can be found, weirdly enough, the world over. i've encountered it in as far-flung locales as the foothills of the himalayas (where it hits the spot after days of hiking) and the LES.

somehow i always wind up "eating out" my favourite jewish foods, I suppose I'll have to hunt up a copy of the book regardless and spend some time in the kitchen fulfilling my jonesings authentically!

pastrami from second avenue deli

i'm going right now

Gotta go with the kugel... or the latkes... or the matzoh ball soup. All so good!

I just love macaroons but there are so many other middle eastern foods like falafels that are eaten in Israel that are great too!

Noodle kugel!!!

Latkes, Kugel!

Rugelach or brisket. Please don't make me choose.

Latkes...lots of sour cream!

Challah bread. It makes the best french toast.

matzoh balls are my favorite. I can't get enough of them.

Challah. It is like regular bread but 100% more awesome! Dipped in chicken soup, battered for French toast, sliced into sandwiches. :)

Chicken Matzo Ball soup. Hmmm...or bagels with lox. It's a tie.

How about some Kasha Varneshka's?

potato Latkes.

latkes, knishes, mushroom soup, matzo ball soup,

Potato Latkes

challah bread

Bring on the chopped liver! With Ritz crackers, please.

I love matzo ball soup!

potato latkes

Matzoh ball soup definitley !

Definitely latkes. Close second for whitefish salad on onion bialy and matzo meal pancakes, followed by homemade gefilte fish. This year I will be making David Lebovitz's Chocolate-Nut Matzo Crunch and I expect that it will take its place in the pantheon.

my husband makes the best matzo brei

Chopped herring!

gefilte fish!

latkes topped with (ahem) salsa. Don't throw things at me!

Latkes, latkes, latkes!

It's great to see them on the cover with a big dish of sour cream! I'm getting hungry!

Go Arthur!

Definitely my grandmother's latkes... and bagel and lox! :)

I'd be hard pressed to think of a Jewish food I didn't like (ptchah excluded). They're all so good. latkes, kasha varnishkes, brisket, chrain, kugel, challah, lox, gefilte fish, tsimmes.... oy!

Pastrami on rye!!!

latkes or lox... maybe latkes and lox?

lox and bagels

Latkes or rugelach-it would have to come down to the flip of a coin!

bagels (REAL ONES!!!), and challah french toast!

2 years ago, I started making tsimmes using sweet potatoes, carrots, dried apricots, dried cranberries and any other great dried fruit I had. Then with butter, sugar, orange juice and fresh grated ginger, it came out great. I also love noodle pudding(kugel).

Latkes, yum :)

Kugel with rich raspberry preserves served warm.

Kasha varnishkas ... mmm ..... mmm .... good!

bagel and cream cheese with lox

Challah if ya hear me!

Potato cakes with apple sauce and sour cream.

Oy! It's too hard to pick just one, but my grandmother's potato kugel is right u there - and latkes, challah, and a good, greasy, piled high pastrami on kaiser.

P A S T R A M I... on Rye

Bagels and lox

Lox and bagels, followed by chopped liver!

Bagels. I don't know that I've ever had any other Jewish food in my life. But I could be wrong. It's happened before.

Whitefish salad with bagel chips, tomato, cucumbers, cole slaw and half sour pickles.

pastrami on rye

Latkes all the way

Whitefish salad on an everything bagel. :-)

Latkes with sour cream!

Bialys and lox!

matzo ball soup!

MATZO BALL SOUP

Fried matzos

A good onion roll served with cream cheese, smoked whitefish, onion & tomato.

Latkes is at the top of the list

I actually really like plain matzo crackers- weird, eh? I'll have to look up this book and expand!

Matzo Ball soup is my favorite!

poppyseed homentash

I've been making amazing apricot hamantaschen based on an old friends grandmother's recipe and for today that's my favorite...but I also love lots of other things...

A bagel with cream cheese, lox, tomato, and red onion.

matzo ball soup

I love bagels!!

latkes and challah

matzo ball soup and challah

Love the latkes! Thank you!

hands-down, the dill pickles produced from my great-grandmother's recipe. Sublime.

I love latkes and matzo ball soup

Usually I'd say challah (with crunchy peanut butter, please) but I have a cold so tonight I'm going with matzoh ball soup.

While it's impossible to choose just one, I love a slow cooked fresh brisket loaded with onions on top of kasha varnishkas and a sour tomato or full sour pickle on the side.

Heaven !!!

Talk about comfort food !

I just love matzo meal latkes.

I do not know how to cook Jewish food that is why I want to win the Jewish Home Cooking cook. I just love the Jewish people and want to learn how to cook Jewish. The food looks sooooo good and yummy.
