Mark 'The Minimalist' Bittman Now Blogging

20080206-bittman.pngFor someone who writes under the column title "The Minimalist," the New York Times food columnist, cookbook author, and television personality Mark Bittman sure seems to have set an expansive focus on his new New York Times blog Bitten. Besides the stripped-down easy-to-follow recipes he's known for:

We’ll also bat around the big ideas that foodies sometimes ignore: how it gets produced and moved from one place to another, as well as who pays for it and profits from it....

What else?

There will be other regular features as well — loads of new recipes; guest posters; Minimalist video clips...; reports from my (and your) food-related travels; and more.

I am one foodie who does care about how my food got to my plate! I am glad that he will be posting discussions because I feel like an outcast when I tell friends, co workers and family that I know where my food comes from and go to considerable effort to purchase foods that are raised/grown in a humane and sustainable way. There is so much more at risk than what we injest. Communities, envoroment, employees and animals are all treated with complete disreguard when it comes to making a profit. In my local news recently public schools have learned they are purchasing beef from "downer" cows and serving it to our children. They say they'll only serve chicken, well guess what, the chicken isn't that different. When we learn what we are doing to our world and its inhabatants I hope we will take action and vote with our dollars for a more responsible way of providing food. Thank you Mark!

Yes I read this over the The Kitchn and then went to the Times' site and read up on his debut. How exciting considering it's good to see some simplicity offered in the kitchen, something I'm still trying to get used to.
And any discussion on topics important to chefs, home cooks, foodies, etc.. is only a good thing as we can grow too! :)
