Cook the Book: 'The Vegetable Dishes I Can't Live Without'

Katzen is renown for having made vegetarian cooking mainstream through her work at The Moosewood Café in Ithaca, New York, and via The Moosewood Cookbook, which was inducted into the James Beard Cookbook Hall of Fame last year.

Do roasted potatoes count? I roast sweet potatoes along with the Yukons, if that helps. If you are going to be strict about it, then roasted broccoli.

Is a tomato a vegetable or a fruit? If veggie, then marinara sauce is the one veggie dish indispensable in my humble food world. Am also big on cream soups using asparagus, broccoli, onions, mushrooms -- the list goes on.

La tortilla española (de patatas). Anything that combines egg, potato, onion and olive oil has to be good.

Zucchini and carrots sauteed with some olive oil and lemon juice. I could eat it all day, every day.

My absolute favorite? Perfectly steamed organic broccoli with a little bite of sea salt.

I love veggies on the grill - asparagus, zucchini, tomatoes, corn. YUM.

My favorite meal is tofu with vegetables over rice. I suppose that makes my favorite vegetable dish the standard stir-fry? Broccoli, bean sprouts, soy sauce, ginger, garlic, you get the idea.

I can't believe it is 08 and I can't believe when I went to college the Moosewood Cookbook had recently come out and the classic recipe I made all the time for groups and still do, is her Spinach Lasagna and the other was the Cream of Spinach Soup recipe.

Does a vegetable stir fry(baby portabella's, onions, broccoli, pea shoots, eggplant, bean sprouts, spinach, leeks,and peppers)count? I honestly could not live without some version of a veggie stirfry in my diet, no matter where in the world I am.....

Steamed zucchini and crookneck squash. Baked Idaho potatoes. Steamed cabbage. Slow cooker carrots and potatoes. Sliced garden tomato sandwiches. Baked acorn squash. What is going on?! It's the middle of winter and I'm now craving summer and fall foods. Not nice. Not nice at all.

My mom's family is Polish, and every Christmas Eve we have a big Polish meal. The idea of cold beet soup doesn't go over too well for most people, so when we borscht-eaters became a serious minority (basically just my mom and I), I learned to make it myself and now I make it every year regardless of how few people will be eating it. It wouldn't be Christmas Eve without it!

Oh my god, I can't live without vegetables, period. (Literally, I guess.) Being Chinese, I obviously love garlic stir-fried anything--Chinese broccoli, baby bok choy, bean leaves... My mom also discovered the combination that is zucchini and mushrooms, and I love Brussels sprouts in all its forms.

Are you joking? No way can I narrow it down to one veg dish. My copy of Moosewood Cookbook is dog-eared and stained, and I'm always on the lookout for new vegetable ideas. I just made The Gurgling Cod's celeriac soup and it was delicious. If only I had a green thumb, I'd have a garden and I'd be even more happy!

Agreed - I could never pick one, so I'll pick something I'm craving right now. Fattoush, a middle eastern salad with sumac.

I LOVE zucchanoes - zucchini stuffed with rice and mushrooms and yummy goodness...

...it's from one of the Moosewood cookbooks...I learned it from an old hippie boyfriend in college and is sooo good....especially when you put the red pepper puree on top. And you can throw anything you want into it really.

I could eat tomatoes all day and every day.

I also couldn't pick just one. in the summer, it would surely be sliced tomatoes with oil, vinegar and salt. fall/winter - baked sweet potatoes, toppings vary on what I have in the fridge but usually include greek yogurt. in the spring, probably roasted asparagus.

I love tomato sauce! So versatile and a tasty.

A simple salad of sliced heirloom tomatoes, with large delicate flakes of Maldon salt, excellent olive oil, and basil chiffonade. I could live on this for most of the summer.

On a chilly night I love butternut squash, peeled, cubed mixed with couple tablespoons of melted butter, a heaping tablespoon of light brown sugar, and liberal sprinkles of kosher salt and pepper roasted until soft and sugar is slightly carmelized.

Eggplant. Roasted, grilled, broiled...with olive oil and a sliver of manchego cheese. Amazing.

I used to hate brussels sprouts, and now I love them! I also am a huge fan of leafy greens, chard, kale, etc. I crave them several times a week.

Oh wow, that's a tough question. I think I would not be able to live without chinese cabbage (this vegetable is used to make mak kimchi).

Iceberg lettuce - mostly for its nutritional richness...

Wait, no, it's because the iceberg wedge with blue cheese dressing usually also has bacon in the mix - basically want I really want to do is create a cool, crunchy cocktail composed of water, blue cheese dressing, and bacon.

Given that neither blue cheese dressing nor bacon are not acceptable answers here, I'm going to agree with carusoc and go with broccoli rabe.

Jersey corn and heirloom tomatoes are also high on the list.

Chard with sauteed red onion and a little mustard seed. I could eat it every day.

definitely any type of roasted vegetables: cauliflower, broccoli, carrots, brussel sprouts. That's if I make it at home. When going out I loved sauteed pea shoots.

I will eat asparagus at any moment as long as its fresh. I hate it out of a can.

I love fresh garden tomatoes on whole grain bread with a little Miracle Whip lite. I love making pasta with grilled mushrooms, peppers (assorted colors),grilled chicken. I also love sweet potato casserole. I just love most all vegies so its hard to say which one is my favorite!!!

I love the cauliflower-cheese dish my mother makes.... Cauliflower, boiled lightly then doused in a white cheese sauce with cheese and paprika on top, and broiled till the top is brown and slightly crispy.... mmmmm....

Corn, tomatoes, chickpeas, hot peppers, coriander, apple cider vinegar, olive oil, celery, salt, pepper, and sometimes a can of tuna
