Cook the Book: 'The Tex-Mex Cookbook'

20080128-texmexctb.pngThis week's Cook the Book is one we chose with the Super Bowl in mind. You see, chili, nachos, and bean dips are Super Bowl parties, and Robb Walsh's The Tex-Mex Cookbook is chockfull of great ideas for these dishes. We'll be bringing you some of these recipes this week as we lead up to the game.

Along with the recipes, though, what really makes this book is all the great historical information that Walsh packs into it. From the history of chili joints and "chili queens" to the birth of the nacho, The Tex-Mex Cookbook will give you fodder for small talk during time outs and dud commercials.

And, as always, we're giving away five (5) copies of Tex-Mex this week. All you have to do is answer in the comments: What is your favorite Super Bowl snack?

That old and somewhat scary standby -- melted velveeta mixed with salsa dip. So bad yet so good.

Spinach Artichoke Dip!

4 cup cheese dip
1 cup cheese (cheddar usually),
1 cup cream cheese,
1 cup chopped onion,
1 cup mayo.
Mix together in food processor and then cook in the oven at 400-450 degrees until brown on top (about 15-20 min).
Yum!

Beer with a side of beer

and shrimp is pretty good too

Queso, with salsa made in a crock pot to be dipped with Texas shaped tortilla chips. Manna from Heaven.

Heh the one good thing about the super bowl- all the grocery stores have specials on avocados, big sourdough rounds, cold cuts, and chicken wings. Hot wings, guacamole, and godmother sandwich, om nom nom! Beer is also, of course, crucial for sports watching.

nachos with piles of toppings (cheese, tomatoes, avocado, corn, beans, and jalapenos at the bare minimum). must be combined with plenty of beer for proper enjoyment.

Wings, definitely. Also home made guacamole (really the only kind of guacamole), or anything else that goes great with cheap american beer.

My homemade corn dip - 4 cans of corn, 2 cans green chiles, 4 green onions sliced, 1/4 cup mayo, 2 c. shredded cheese, handful chopped cilantro, LOTS of cumin. Eat it with Fritos scoops....just awesome!

My husband makes a dynamite chili that we put over taco chips and sprinkle with cheese. THAT is a great Super Bowl snack.

I'm not into the superbowl (ducking) but chips and dip are my fav.

My friend Robin's caramelized bacon. Hot thick-cut crispy bacon coated in caramelized brown sugar and baked; who could ask for anything more?

The cheesy (literally and figuratively) combination of velveeta, rotell, and salsa (Joe T Garcia's - where available). Mix in a crockpot, buy fresh tortilla chips. Terrible and wonderful all at the same time.

My wife's candied pecans.

Homemade nachos, using oven-toasted flour tortillas brushed with olive oil & sea salt, then topped with browned very lean (96% fat free) ground beef, 2% shredded cheese, and diced olives, chilies etc. until it's all one gooey, tasty mess. That's good snacking.

We often through an "upscale" superbowl party and my favorite snack at these events is gougeres, a puffy, cheesy little pastry.

btw, matt walsh totally rocks. His restaurant reviews here in Houston have never steered us wrong.

Crescent rolls filled with pepperoni and pepper jack cheese, yummy.

Hard to choose just one but we've got a list of basics that pretty much use interchangeable ingredients so everybody gets a favorite w/o too much fuss. Included are; Jalapeno Poppers, Nacho (ala Frito) Pie, Grilled Kielbasa in a hoagie topped with chili, cheese and onions, Tex-Mex themed hot wings (crushed nacho coating) with avocado/sour cream dips, and the versatile nachos with... Of course some south of the border beer with salt and lime on the can's rim!

For extended TV watching parties in general, it's hard to beat chips and dip. Guac first, onion dip for an occasional change of pace.

French onion dip and Ruffles potato chips

Chili, which goes great with my husbands home microbrew.

Oh my gosh - a favorite from my childhood that mom used to make once in a great while. Dried beef rolled up with cream cheese, sliced into bites and stabbed with a green olive and a toothpick. TOO GOOD!

Taco salad. I really really deserve this. Whwn my daughter was 5 my parents took her from me because I was an alcholic. I moved to florida 4/4/2007, the day my daughter turned 19, with 10 1/2 years sobriety, my care payed off and money saved for the move after working 2 and 3 jobs for years

My family/friends want the whole layout. Everyone brings one
hors d'oeuvre and then we proceed to eat all afternoon! Me? I do the meatballs in sweet/sour sauce with pineapple and bell pepper chunks.

Chicken wings

Deer poppers. Venison tenderloin medallions marinated in Dale Seasoning. Place a jalapeno pepper on the venison medallion, wrap with a piece of bacon and skewer with a toothpick and girl till the bacon is nice and crispy. Yummy.

I abosluely adore nachos! I love guacamole, chili, sour cream, cheese, tomatoes. Wait, I'm getting kind of drooley...

We usually do a big long sandwich, cut up into afewbites-sized pieces, lots of chips and a variety of dips, queso, etc. My favorite has to be wings, just because they're so awesome homemade and that's the one time in the year that I make them!

Wings. Hot, honey mustard, bbq, butter garlic...mmmmm

Super nachos -- Bearitos white corn chips topped with finely chopped red onions, tomato, sweet peppers, hot peppers, black olives and ground turkey cooked in taco seasoning mix (Bearitos). Spead shredded cheese over and cook on an old cookie sheet in the oven until melted and starting to brown. Serve with guac, salsa, cold beer and perhaps refried bean dip. Oh, did I forget to turn on the superbowl?

Dude, steaks are the, but as we're limited this year by not having a party at our own place, we're bringing home-made cocktail franks, samosas, spicy ground beef pies, and guacamole. Mmmmmmmmmmmm.

It's got to be my "nachos" made with toasted whole wheat pita wedges, a robust salsa fresca, chopped green chiles, chopped scallions, browned ground turkey and melted extra sharp New York cheddar.
