Seriously Delicious Holiday Giveaway: Bacon of the Month Club

On Sunday a person's thoughts turn to bacon. At least mine do. I don't have to rush to the office, so I can take the time to cook my bacon properly, slowly over low heat. Of course my thoughts are never very far from bacon, no matter what day of the week it is.
That's why I'm particularly excited about today's Seriously Delicious Holiday Giveaway, a year-long membership in the Bacon of the Month Club, courtesy of the good folks at the Grateful Palate. Every month for a whole year the lucky Serious Eater who wins this most desirable club membership will receive a pound of fantastic small producer, artisanally made bacon personally selected by "Captain Bacon" himself, Grateful Palate founder Dan Philips.
This is my kind of club. In fact, someone gave me a membership in this club a few years ago for my birthday, and I can tell you it provided me with a year's worth of absolute eating pleasure.

I like it crisp. I usually use chopped maple bacon in my potato salad recipe, which doesn't include any eggs or onions. It goes over pretty well.

I agree with pumpkinspice - chewey and crispy. Mt favorite way to cook bacon is in my George Foreman grill - it's fast, that good bacon grease collects for me in the little boat thing that goes under the lid, and it delivers bacon just the way pumpkinspice and I like our bacon. Thin sliced bacon - cooked crisp
Thick sliced bacon - pliant
X-Thick sliced - crisp on the outside, juicy on the inside.
There's a butcher in MW MN who makes an extra thick, double-smoked, half-salted bacon thats almost like pork chop slices, or lardons in stick form!

Bacon should be slightly crisp on the edges and pliant in the middle. When breaking off a piece, it should not snap like so much asparagus. It should not be hard. It should not shatter. It should not spatter oil all over your shirt. The center should be cooked through yet soft, tender, and fatty, and melt your mouth as you eat a small piece, and provide a counterpoint to the crisp edges. It should be chewy enough that you feel the bacon is of some substances, but not so much that you have to work at it. You should be able to see a distinct edge when you hold it up to the light. However, the bacon should also be sturdy enough to withstand being dragged through maple syrup.

I prefer bacon just slightly crispy. A piece of bacon should remain mostly rigid when picked up, but you shouldn't be able to easily snap it into pieces.

For me, it depends on what I'm preparing and/or serving with the bacon (I almost said something along the lines of "it depends on what else I'm serving" but that seemed to me to put the primary emphasis on the non-bacon components of a given dish or meal and only a secondary emphasis on the bacon itself - never a good idea!).
There's a time and a place for both crispy and pliant.
For me, it often comes down to a simple rule of "slightly more crispy in the morning and afternoon" and "slightly more pliant at night."

The perfect bacon is removed from the pan right before it's in danger of burning. After the grease drains, that leaves it the perfect texture so you feel like you could chew each piece forever (and wish you could)

And to the poster who disparaged turkey bacon I would say that I've found a couple different brands of turkey bacon that I like very much. If you're eating turkey bacon that's shaped and colored to look like bacon but ends up looking like a car air freshener then you're not eating the right stuff. Good turkey bacon is just smoked turkey sliced thin. What's wrong with that? I don't think it's really any kind of bacon and I'd rather they just called it smoked turkey but I won't let that stop me from enjoying it occasionally.

I'm a major fan of most 'piggy' parts, however bacon is my favorite. It is best when fried gently, until semi-limp, and then finished off under the broiler to a slight crispy crunch-just enough to make ya' oink!
