Seriously Delicious Holiday Giveaway: Bacon of the Month Club

20071202BOMC-logo.png
20071202TGP_logo.pngOn Sunday a person's thoughts turn to bacon. At least mine do. I don't have to rush to the office, so I can take the time to cook my bacon properly, slowly over low heat. Of course my thoughts are never very far from bacon, no matter what day of the week it is.

That's why I'm particularly excited about today's Seriously Delicious Holiday Giveaway, a year-long membership in the Bacon of the Month Club, courtesy of the good folks at the Grateful Palate. Every month for a whole year the lucky Serious Eater who wins this most desirable club membership will receive a pound of fantastic small producer, artisanally made bacon personally selected by "Captain Bacon" himself, Grateful Palate founder Dan Philips.

This is my kind of club. In fact, someone gave me a membership in this club a few years ago for my birthday, and I can tell you it provided me with a year's worth of absolute eating pleasure.

To win this coveted membership just leave a comment on this post telling us how you like your bacon, crisp or pliant.

You have until noon ET tomorrow (Monday, December 3) to enter. One winner will be chosen at random from among the commenters. The standard Serious Eats contest rules apply. Contest winners are limited to residents of the continental U.S.

And if you don't happen to win I heartily endorse joining the Bacon of the Month Club anyway. You can sign up here and by entering promotion code SERIOUSBACON08 at checkout you'll receive a 5 percent discount.

i like my bacon crispy but not greasy..i love my bacon wave...i want this bacon of the month membership!!

Crispy, baked in the convection oven. Yum!

bacon's the yummiest when it's a combination of chewy and crispy.

Mmmm, bacon:both the last straw in turning me atheist (why would a god prevent his chosen people from enjoying such an ambrosial treat?) and reinstating deism (to paraphrase Ben Franklin: Bacon is proof that God loves us and wants us to be happy).

I love crispy bacon!

Not too crispy, but I want it to hold it shape when I pick it up.
There is nothing worse than limp bacon!!

I like it crisp. I usually use chopped maple bacon in my potato salad recipe, which doesn't include any eggs or onions. It goes over pretty well.

I agree with pumpkinspice - chewey and crispy. Mt favorite way to cook bacon is in my George Foreman grill - it's fast, that good bacon grease collects for me in the little boat thing that goes under the lid, and it delivers bacon just the way pumpkinspice and I like our bacon. Check it out yourownself!

After not eating meat for the last two years, I finally caved in to the siren song of bacon. I have an unconditional love for bacon, be it crisp or pliant, I love me some bacon. ;)

Crispy enough to have crunch, but 'limp' enough to still have some chew. Then again, is there really such a thing as BAD bacon? :-)

I like mine baked in the oven, not too crispy and not limp either. Mmm...bacon.

Thin sliced bacon - cooked crisp

Thick sliced bacon - pliant

X-Thick sliced - crisp on the outside, juicy on the inside.

There's a butcher in MW MN who makes an extra thick, double-smoked, half-salted bacon thats almost like pork chop slices, or lardons in stick form!

As crisp as crisp can be!

Crisp, but still a little chewy.

not too chewy, not too crispy...somewhere in between is perfect

Cripsy, definetly crispy, I love the crunch, I like to use a maple syrup/dijon honey glaze and bake it in the oven, crispy sweet salty tangy all in one bite. so good.

Crispy ridges & pliant valleys

Thick, crispy on the outside, and just chewy on the inside.

i'll eat it any old way... i think my favorite is the way they serve it at peter luger.

I like it from a pig. Crisp or pliant.

Crispy.

Crispy wrapped around shrimp. Mmmm.

I love it crisp, but not crunchy, baked in the oven then cooled and chopped up in quiche!

I like it American pliant...having pliant in England is a whole other deal...but viva la pliant!

I like mine somewhere in between. Oh, I also liked it wrapped around a date stuffed with goat cheese. Or a jalapeno stuffed with cheese. Um. I like my bacon with cheese!

Bacon should be slightly crisp on the edges and pliant in the middle. When breaking off a piece, it should not snap like so much asparagus. It should not be hard. It should not shatter. It should not spatter oil all over your shirt. The center should be cooked through yet soft, tender, and fatty, and melt your mouth as you eat a small piece, and provide a counterpoint to the crisp edges. It should be chewy enough that you feel the bacon is of some substances, but not so much that you have to work at it. You should be able to see a distinct edge when you hold it up to the light. However, the bacon should also be sturdy enough to withstand being dragged through maple syrup.

However, having bacon is better than not having bacon. So: eat the bacon.

ahhhhhh bacon! slow cooked but with a bit of soft fat left on..coated both sides in a little brown sugar while still frying...yummmmm

Crisp, beyond a shadow of a doubt. However, not so crisp that it tastes burnt.

Crispy bacon is the best!

Crisp, but not burnt. Extra-thick cut, please. And not Canadian bacon.

Pliant, please. Maybe a bit crispy. Okay, anything short of incinerated....

Crispy. mmmm... bacon.

Crispy, but not shatteringly crispy. There still needs to be a little chewiness to it.

chewy and crispy! baked in the oven is the best way !

I like it semi-crispy just as it turns opaque and it's crisp enough to bite easily.

bacon should be eaten with the fingers.

As the folks at Grateful Palate say, Seek Bacon And You Shall Know Transcendence. With that said, crispy.

Me, I don't like bacon, but my husband, who would LOVE this gift, likes his bacon super crispy.

As long as its not too crispy I'm happy with anything.

I prefer bacon just slightly crispy. A piece of bacon should remain mostly rigid when picked up, but you shouldn't be able to easily snap it into pieces.

There is no such thing as bad bacon!

Crispy and pliant... both are great.

thick and chewy!

Crispy, crispy, crispy!

Both, I think. I like my bacon crispy- but I like it when there's a little bit of pliant fat left on it to melt in my mouth. Yum!

Usually pliant...sometimes crispy

I like it crispy, but thick enough to be chewy.

Crisp. Cooked in my Lodge cast iron pan.

LIke any good southerner, I like my bacon thick cut and firm, but not crispy.

Pliant, in a BLT Canape.

crisp, but not burnt

I like bacon best just before it crosses the pliant/crispy border. Nice and smokey. Apple or hickory smoked. Please. Now.

i like it crispy.
and i like it draped over meatloaf, especially.

For me, it depends on what I'm preparing and/or serving with the bacon (I almost said something along the lines of "it depends on what else I'm serving" but that seemed to me to put the primary emphasis on the non-bacon components of a given dish or meal and only a secondary emphasis on the bacon itself - never a good idea!).

There's a time and a place for both crispy and pliant.

For me, it often comes down to a simple rule of "slightly more crispy in the morning and afternoon" and "slightly more pliant at night."

Crisp for me.

Always crispy, but not like shattery

I like it crispy, but not so crispy that a blob or two of fat has been cooked away. I need my fat!

somewhere in the middle for me. not too crispy, not too pliable

Crisp. One minute per piece in the microwave. MMMM. And nothing beats a peanut butter and bacon sandwich on white bread. My favorite by far.

Somewhere in the middle. If you hold it up, it should sag a little, maybe 30 degrees, but it shouldn't fold in half.

Crispy! Oh, please let me win, please let me win! This is my favorite of all your give-aways. I love bacon.

i like the meaty part crispy & the fatty part fatty and soft.

I like my bacon cooked crisp.

Bacon should be crisp for BLT's, but more chewy for eating alone or with eggs.

crispy but still chewy

Super crispy on its own. A little less so on a cheeseburger.

Thick sliced: pliant
Thin sliced: crispy

Just this side of burnt.

I like it as crisp as can be.

The perfect bacon is removed from the pan right before it's in danger of burning. After the grease drains, that leaves it the perfect texture so you feel like you could chew each piece forever (and wish you could)

Mmmmm....Bacon!!!!

it's just not bacon if it's limp- crispy is the only way to go!

just turning crisp in the oven

Can't it be both? It should have a little crispness at the edges, but still be pliant in the middle, without being limp, soggy, or undercooked. It's tough to get perfect, but even getting close is like tasting the porky divine.

Crisp, but not burned.

I say crisp. Chewy bacon is just a little too close to rashers or canadian bacon for my tastes. We didn't fight two wars with those bastards just to have them force their perverted limp bacon lifestyles upon us.
Crispy or death!

crisp, but not crunchy.

Crisp and browned, but not burned.

crispy/pliant :)

Crispy but still a little bit chewy for me.

crisp with a little bendy to it

Two rashers of back bacon, not too thick. The bacon should be chewy and the fat slightly crispy.

Crispy, but still a wee bit pliant in the middle

Crispy but not crunchy

just to be different, i'm going with crispy...

:)

Crisp but not crumbly. I used to like it super-crisp but a trip to Australia where they serve it half-raw (to my way of thinking) showed it's actually pretty tasty -- and larger! :) -- when it's not too well done.

I like it nice and crisp.

fatty, dripping grease.... exactly why I just gotta win this! Wife would have to cook it up, rather then aaaaargh I hate it, turkey bacon.

Crisp enough so it doesn't droop, but not so crisp that it shatters.

crispy sometimes but british bacon....soft

very pliant -- so it's just barely cooked warm enough to eat

Crispy, thick.

I like it cooked on a rack in the oven (less mess, less twisty shapes that don't cook right).

mostly crispy with a few chewy spots

Slightly chewy, but crisp on the edges.

Thick, pliant, with some crispy edges.

Crisp! Just finished two strips minutes ago--baked in the oven for 8 minutes and turned over for 3 more, drained and then heated up at the end in the cast iron skillet where three slabs of French toast were browning as opposed to the pan used to sauté pears and douse them with maple syrup.

so crisp that it shatters

Crispy in general though it really depends on the cut and the dish.

Seriously crispy -- the crunchier, the better!

Crispy, crispy, crispy!

crisp with some chew & the fat must not be soft.

I like bacon right in the middle. Crisp enough to not bend when I pick it up, but pliant enough so that it doesn't shatter when I take a bite.

Crispy, but I would never refuse chewy. Hey, it's bacon after all!
Just like that joke about pizza and sex.

I prefer mine crispy, yet still kind of pliant. More on the crispy side for thin-sliced, pliant side (with crispy edges) for thick-sliced.

Crispy is the absolute best, especially if it's a little chewy. But really - it's BACON. As long as it's mostly cooked, I'll eat it.

I like my bacon very crisp

Crispy, pliant, in a sandwich, on a pizza, as long as there is plenty of it, I love bacon. Bacon, bacon, bacon. Say it soft and its almost like praying...I'll never stop saying Bacon!!

Crisp. The whole family is split actually. 3 want it limp, and 3 want it crisp. And because I'll cook it to order (1/2 and 1/2), I get kudos for it. Which is better than the ex, who cooked it limp always.

Mainly pliant with the occasional crisp when topping chowders.

I like both in my bacon, crisp and chewy, like when you cook bacon in a too small round pan and the end bits have a little bit of chew and the center of it is nice and crisp.

crispy with eggs, pliant on top of a Sally's Bacon and Onion Apizza!

Pliant. Are you still allowed to win the bacon if you answer otherwise? I must admit I didn't carefully examine the rules but I'm sure the editors have covered such an unfortunate eventuality.

And to the poster who disparaged turkey bacon I would say that I've found a couple different brands of turkey bacon that I like very much. If you're eating turkey bacon that's shaped and colored to look like bacon but ends up looking like a car air freshener then you're not eating the right stuff. Good turkey bacon is just smoked turkey sliced thin. What's wrong with that? I don't think it's really any kind of bacon and I'd rather they just called it smoked turkey but I won't let that stop me from enjoying it occasionally.

I like my bacon crisp, but not too crunchy, but my hubby likes his chewy so I cook it both ways. MMMM...BACON!

Crispy, unless it's wrapped around a beautiful piece of braised pork belly.

crispy - or else it means you're English

Crispy bacon, always.

crisp but not overly burnt

Crispy! Baked in the oven on a rack sprinkled with brown sugar. YUM!

Crispy or pliant but just not burned. And if meets up with some maple syrup oozing over from the pancakes....yummm!

pliant please.

Just shy of crispy, please. I don't want it to crumble or shatter when I bite it, but I don't want it rubbery, either.

Oh, and thick cut, please.

Crispy, baked in the oven.

I would've said pliant a few years ago, but now my hubby cooks bacon nice & crispy for me -- just perfect!

Crispy only, please!

both, there is no such thing as bad bacon

I like my bacon between crisp and pliant.

Pliantly crispy.

pliant, please.

it has to be crisp & cooked in the broiler

crispy! and occasionally glazed with maple & cayenne

I bake mine so it's crispy all through. Yum!

I like my bacon crispy, but unless something has gone horribly wrong I'll eat it however it's served.

Crisp, but not burnt.

It's perfect if it's crispy on the edges and just a touch chewy towards the centers. Mmmmmmm.

Crisp around the edges but pliant in the middle...the best of both worlds.

Crispy with breakfast, but pliant in a sandwich. You can't have it the same way no matter what.

Pliant. It's a fine line with bacon - it can turn from pliant to crispy in no time flat. But I like mine right on the edge of pliant where it's about to get into crispy-land. Teetering on the edge... yum!

pliant at the edges, crispy in the middle. and absolutely not from a turkey.

crispy, for sure.

I'm a major fan of most 'piggy' parts, however bacon is my favorite. It is best when fried gently, until semi-limp, and then finished off under the broiler to a slight crispy crunch-just enough to make ya' oink!

Crisped, in the oven on a rack, in the microwave or in the george foreman (nice wavey bacon!). I don't like my bacon too greasy, yes I realize grease comes with the territory but what can I say.

Bacon needs to remain pliant for the complex mixture of fat, smoke and salt to shine.

crispy, but not having all the fat rendered off.

Crisp, absolutely. Lower in fat, satisfying mouth feel. Wrapped around Scallops with waterchestnuts, and pickled ginger. Yum!

Always, always, always chewy.... so fantastic...

"When you're in my house, you'll do as your told... Now butter you bacon!" --Homer J Simpson

Crispy bacon is the best - it should shatter on the plate!

on the pliant side of the bacon crispyness spectrum, but i don't mind a little crunch

Pliant with some crisp!

Pliant, not that I mind crispy. Really, as long as it's bacon, and not carbon, I'm in heaven!

Mmm...crispy please!

crisp, not toasted but CRISP..
preferably dry-heat roasted so the grease drains out too..

MMM, BACON!

Crispy fat that melts on the tongue, leaving the also crispy meat to chew on.

i like 'em crispy. and salty. and yummy.

CRISPY. so much so that I usually order it well done.

Crispy all the way!

Bacon- I like it crispy
Pancetta - a little chewy

Crispy. Very crispy.

There is nothing better than a high-quality, hardwood smoked, thick-sliced piece of bacon cooked just to the point of not limping and providing a nice smoky and salty taste on the palate with a just-beyond-chewy feel on the teeth. That is good breakfast food!!!!!

Right in between

The biggest battle in our house! My wife prefers extra-crispy... but I'm a pliant guy.

We both agree that we can not get enough BLT sammiches. :-)

Bacon...truly your porcine wiles seduce me! D:

Crispy, in small strips, sauteed with onion and tossed with egg and parmesan in a classic Spag Carb!

I love bacon just cooked enough to prevent possible trichinosis. The flavor is in the fat, and I consider it criminal to cook the fat and taste away.

Harvey

I like it moving from pliant to crispy.

Crispy bacon.

I like my bacon cooked long enough so that all the fat is cooked but taken off the heat before it gets to the crisp stage . I guess I like it meaty .

depends on the bacon...but i tend to try for that small space right before it gets really crispy.

I feel that it needs to be crisp but it just has to have a tiny bit of give to it. Great, now I've got to cook up my platter bacon, just because. ;)

Crispy...actually, even burnt is pretty good!

I enjoy my bacon a little crisp but chewy. To be honest, I just love bacon and will eat it any way that it is cooked. I also love the smell of bacon, wow.

crispy alone, pliant in black bean soup

Crisp. Carmelized is pretty good. Bacon is my friend.

pliant is my fav

crispy for me

It's got to be crispy. Anything else is sacrilegious and lazy.

My roommate once made bacon brittle. It was one of the most ridiculous dishes I've ever eaten and I loved every artery-clogging moment of it.

Sweet baby jesus, I would love this club.

crispy with a bit of strategic chew

slightly chewy bacon

Crispy. Mmmm, Bacon.

Pliant or crispy, it's the quality that counts. That's why I like this offer.

Crispy! Then again, how can any kind of bacon, crisp or not, be a bad thing?

Crispy, definitely, then crumbled over roasted Brussels sprouts!

crispy, but a little chewy.

crispy but not crumbly, pliant enough to be slightly chewy

crispy but not crumbly, still slightly chewy

Crisp--but not burnt.

Pliant. I'm English. If the bacon is of a high quality the fat should remind of you pork belly.

We love our bacon crispy and would be thrilled to get some each month :)

Pliant, yet with a nice crunch under the tooth!

Bacon is great any which way--it's piggylicious!

Crispy. Bacon is great in a peanut butter sandwich.

The softer and fattier the better. Yuuummmm.

Some parts crispy some parts chewy. Done in an oven.

I like it crispy, but not cooked to the point where it starts to crumble.

Crispy, just a few seconds before burning.

i like my bacon still bendable.

I had to look up pliant - which was defined by Merriam Webster as suitable for many uses.

I will go with crispy.

If the bacon is high quality, pliant will do, though.

Thin bacon - crisp

Thick sliced bacon - pliant

I like my bacon chewy. I love the thick chewy pieces of fat that are often found on the end.

Crispy always

chewy is my favorite

Crisp in a sandwich, pliant as a side.

Chewy - but not raw.
