How To Make Pig Candy

Bacon + dark brown sugar + ground chiles = pig candy! Curt McAdams suggests serving this before Christmas dinner with "sliced pears and brie, or figs and cheddar, or all of the above," for a unique appetizer. Or you could just eat it own its own. [via tastespotting]

I saw a very similar recipe on the PBS show "Diary of a Foodie". They visited Heston Blumenthal, and then their recipe was to make bacon and egg ice cream similar to what is made at The Fat Duck. They candied the bacon similar to above, and then made a custard ice cream without tempering the eggs so it had bits of scrambled egg in it. It looked pretty good.

I make mine with a mixture of maple syrup & Maker's Mark instead of brown sugar...mmm

I had Praline Bacon (very similar to pig candy) for the first time at Grits and Groceries (http://www.gritsandgroceries.com/), a WONDERFUL restaurant almost in middle of nowhere in South Carolina. Oh my goodness, that stuff was ridiculously good. As is everything else I've had there.

WHOA!! My favorite three food groups; PIG, SUGAR & CHEESE! Forget serving it with fruit. That's way too healthy.

This sounds incredible- both appealing and revolting all at the same time!

Too sweet and fatty but a pretty picture. Fruit and cheese sound much better.

My son just asked for this for Christmas morning breakfast. Have made for years minus the chilies. Definitely will try the extra touch. Thank you!

One of my favorite LA restuarants (Lou), sells this on their appetizers menu. It is divine!
