nothing beats good ham and swiss for me... maybe a bit of good mustard as a finishing touch... a nice grainy or Dijon is always fine, but I might be in the mood for a honey mustard or as a Cape Codder, I'm also partial to Cranberry Mustard.

smoked ham, obviously, and generous amounts of mustard, Gruyère, and fresh ground black pepper, then pressed between two hot griddles. Although I recently tried replacing the Gruyère with some Wisconsin Brick cheese. The result was delicous. A few thin slices of apple is never a bad thing either.

With an applewood-smoked ham, I might be tempted to make a marmalade of apples and onions, roasted separately, then chopped, cooked briefly in reduced cider with a little sage, then cooled. Whole-grain mustard, too. Crusty thick slices of slightly tangy bread. Wedge of rosti on the side.
With a salty country ham from Viriginia, on the other hand, I'd take a long-cooked mess of greens. Chop. Sauté in some of the pot likker to dry out a bit. Cool to room temperature. Kaiser rolls with the same kind of mustard as above. Warm potato salad or sweet potato fries at this time of year. Summer? Coleslaw and cold picnic-style potato salad with the works.
Eliz. at 2:10PM on 12/05/07
Good, ham-tasting ham (it's getting hard to find ham that doesn't taste watery!), a slice of Emmental, Gouda, or Jarlsberg, a good spread of grainy mustard, and the whole thing put on a nice, crusty bread and grilled for about 5 minutes, until golden brown and the cheese is melted. Mmm...excuse me, I have to run to the store.

Hi, I have to be honest. I am a vegetarian. My husband and two sons are not!
They all love ham and ham sandwiches. Most of the time, they use rye bread,
horseradish mustard, and Swiss Cheese. If my dad has his garden tomatoes, my husband adds a couple of slices of homegrown tomatoes!
Thanks for the chance to win a wonderful contest! Cindi

'Round my house, we tend to keep it simple, because that's the way my husband likes it (I've been working on expanding his culinary horizons, but some things are just carved in stone): whole wheat bread (although I prefer rye), Honeycup honey mustard, and swiss or cheddar, depending on what we have on hand. Some of the combos above really have me salivating, though!

My recent favorite ham sandwich is fresh ham, swiss cheese, lettuce, roasted pepper, and whole-grain mustard, on a crusty olive roll. I'm trying to figure out a good way to involve horseradish in it, though, since I've been reminiscing about a canape I used to make that placed a mixture of sour cream, horseradish, and grated Granny Smiths in a Westphalian ham cone. Oh, good smoked ham with a slice of cheddar on "pan de agua"--a crusty bread sold at the bakery in the plaza near the beach my family goes to (and I used to go to when I was a kid) in Puerto Rico. There was always a little crunch from the grains of sand that got flung into the sandwich, no matter how hard my mom tried.
Of course, I love a good Cuban any day and you can't just use any old crappy ham--the good thick stuff is best.
StarryRose at 6:12PM on 12/05/07
Nothing new here--just grainy mustard, maybe some cheese, nice bread, preferably eaten in France. In which case dijon mustard.
Eilen at 6:14PM on 12/05/07
Ham and cheese on a warm/almost toasted buttered croissant.

i don't normally care, but i'd go with either cheese and mustard. or i'd go with apples, honey mustard, and some soft cheese

Dijon mustard, a bit of homemade mayonaise, on rye bread. No cheese.
dksbook at 6:31PM on 12/05/07
Spanish ham (jamon serrano) on a baguette that has been smeared with a ripe tomato, drizzled with olive oil and sprinkled with sea salt. YUM! makes my mouth water just thinking about it!

Munster cheese, tomatoes, spinach, cucumbers and some garden herb cream cheese.
Minnesotamom at 7:21PM on 12/05/07
Depends on the ham. . . maybe a good sharp dijon-style mustard, maybe a little butter and sea salt. . . apple butter is also nice. . . but if I had to vote for one, I would choose fig confiture and aged manchego.
guy2k at 7:22PM on 12/05/07
Munster cheese, tomatoes, spinach, cucumbers and some garden herb cream cheese.
Minnesotamom at 7:24PM on 12/05/07
Totally simple, just some post-Christmas ham, thinly sliced, between a split baguette that has been spread with some stellar butter.
ChristinaINP at 7:31PM on 12/05/07
onions, lettuce, tomato, and hot sauce
zekks at 7:47PM on 12/05/07
When the ham is good, it isn't all that complicated - ham, lettuce, mayo on real rye.
Dogstar at 7:55PM on 12/05/07
MMMMMM What -isn't- good on a ham sandwich?
Eggs, lettuce, bacon, tomato and mayo! :D YUM !
Anastasia at 8:04PM on 12/05/07
Ham, Hellmann's, & lettuce. Prefer white bread, but I'll settle for wheat. Hmm... getting hungry!
girl222 at 8:07PM on 12/05/07
ham, and more ham!
46137 at 8:09PM on 12/05/07
OK - this will be weird, but I like a ham sandwich on nutty-grainy bread, with cottage cheese. Tart low-fat cottage cheese on the dry side. I'm picky about cottage cheese. But something about the contrast with the smoky, salty ham... Mmmm.
But ham with almost any cheese will do in a pinch. I don't even need bread, really.

ErisianSaint at 8:44PM on 12/05/07
i'm a simple girl...just swiss. but put it on a croissant...yum!
daniello at 8:48PM on 12/05/07
Unsalted butter, cheddar sliced transparently thin, French mustard (and apple-smoked ham) on a baguette. After that you can take me to Pere Lachaise and file me 6 feet under, completely satisfied.
mcmvox at 8:53PM on 12/05/07
Good mustard, mayo, cheese, and bread.
Marilyn at 8:55PM on 12/05/07
