smoked ham, obviously, and generous amounts of mustard, Gruyère, and fresh ground black pepper, then pressed between two hot griddles. Although I recently tried replacing the Gruyère with some Wisconsin Brick cheese. The result was delicous. A few thin slices of apple is never a bad thing either.

swiss cheese and mustard and either pickles or lettuce on a whole grain bread.

honey mustard and american cheese on pumpernickel

With an applewood-smoked ham, I might be tempted to make a marmalade of apples and onions, roasted separately, then chopped, cooked briefly in reduced cider with a little sage, then cooled. Whole-grain mustard, too. Crusty thick slices of slightly tangy bread. Wedge of rosti on the side.

With a salty country ham from Viriginia, on the other hand, I'd take a long-cooked mess of greens. Chop. Sauté in some of the pot likker to dry out a bit. Cool to room temperature. Kaiser rolls with the same kind of mustard as above. Warm potato salad or sweet potato fries at this time of year. Summer? Coleslaw and cold picnic-style potato salad with the works.

Good, ham-tasting ham (it's getting hard to find ham that doesn't taste watery!), a slice of Emmental, Gouda, or Jarlsberg, a good spread of grainy mustard, and the whole thing put on a nice, crusty bread and grilled for about 5 minutes, until golden brown and the cheese is melted. Mmm...excuse me, I have to run to the store.

Stone ground mustard and havarti cheese... mmm..

Growing up I frequently had ham and mustard sandwiches for lunch - I alternated with plain turkey sandwiches - but now I prefer a grilled ham and cheese, no mustard. And it has to be grilled!

horseradish, Guggisberg baby swiss and some hearty, whole grain bread. YUM!

My recent favorite ham sandwich is fresh ham, swiss cheese, lettuce, roasted pepper, and whole-grain mustard, on a crusty olive roll. I'm trying to figure out a good way to involve horseradish in it, though, since I've been reminiscing about a canape I used to make that placed a mixture of sour cream, horseradish, and grated Granny Smiths in a Westphalian ham cone. Mmmmmmm. Why serve 'em to company? Eat 'em all myself!

Oh, good smoked ham with a slice of cheddar on "pan de agua"--a crusty bread sold at the bakery in the plaza near the beach my family goes to (and I used to go to when I was a kid) in Puerto Rico. There was always a little crunch from the grains of sand that got flung into the sandwich, no matter how hard my mom tried.

Of course, I love a good Cuban any day and you can't just use any old crappy ham--the good thick stuff is best.

Nothing new here--just grainy mustard, maybe some cheese, nice bread, preferably eaten in France. In which case dijon mustard.

Totally simple, just some post-Christmas ham, thinly sliced, between a split baguette that has been spread with some stellar butter.

OK - this will be weird, but I like a ham sandwich on nutty-grainy bread, with cottage cheese. Tart low-fat cottage cheese on the dry side. I'm picky about cottage cheese. But something about the contrast with the smoky, salty ham... Mmmm.

But ham with almost any cheese will do in a pinch. I don't even need bread, really.
