20071202TGP_logo.pngOn Sunday a person's thoughts turn to bacon. At least mine do. I don't have to rush to the office, so I can take the time to cook my bacon properly, slowly over low heat. Of course my thoughts are never very far from bacon, no matter what day of the week it is.

That's why I'm particularly excited about today's Seriously Delicious Holiday Giveaway, a year-long membership in the Bacon of the Month Club, courtesy of the good folks at the Grateful Palate. Every month for a whole year the lucky Serious Eater who wins this most desirable club membership will receive a pound of fantastic small producer, artisanally made bacon personally selected by "Captain Bacon" himself, Grateful Palate founder Dan Philips.

This is my kind of club. In fact, someone gave me a membership in this club a few years ago for my birthday, and I can tell you it provided me with a year's worth of absolute eating pleasure.

Definitely crisp, but only just--there's nothing worse than bacon jerky.

I like my bacon sliced thick enough that it can be fried until ir's crisp on the outside but is still moist inside.

i never met a bacon i didn't like, but chewy and pliant is my fave.

Crisp. I cook it until it is still a little limp when raised. As it drains it gets perfect.

Crisp or pliant... your question seem so cruel. Crisp, yes, on a summer BLT; pliant, most certainly, wrapped about a succulent filet. If a man must choose between two equally fervent loves to win this contest, I gladly proclaim myself a loser.

Crisp, usually, but it depends on what I'm eating it with—e.g., if you have a crisp waffle, sometimes you want your bacon chewy, for contrast.

Extra crispy is the only way. The only way it could be better is if someone cooked it for you with sausage and eggs and fed it to you. Man I wish there was a contest for that!

Oh baby, a topic right up my alley...baaaaacon. If I'm partaking "on the side" or in a sandwich, it must be semi-crispy. Meaning no flop, but a bit of a soft chew in the meaty part. The fat can't flop...ever. A slow gas burn in cast iron does this perfectly.

If it's wrapped around a succulent scallop, a little more underdone is okay, simply because I don't want to overcook the scallop.

Man oh man, make me a grilled cheese and bacon sammie and I'm putty in your hands...

Extra thick cut applewood smoked bacon that is just barely crisp. Nothing better as a way to serve bacon than a BLT when the summer tomatoes are at their best and you can get nice baby field greens.... I like to add a slice of sharp cheddar as well sometimes.
