Do you know where you're getting your turkey this year? Not yet? Then we've got a contest for you! The good folks at D'Artagnan are providing us with a turkey a day to give away to one lucky Serious Eats reader from today until Sunday, November 18. That's ten of these bad boys in all!*
D'Artagnan is a purveyor of many things deliciousfrom pâtés to sausages, foie gras to wild mushrooms, game meat to truffles. But what we're especially interested in right now is their turkey.
D'Artagnan's certified organic birds are fed organic grains and pure spring waterno protein supplements, added poultry or fish byproducts, pesticides or herbicides. Additionally no antibiotics, no growth hormones. The result is a poultry with great flavor, tenderness, and a 25 percent lower fat content than standard commercially raised turkey.

Grew up only eating white meat, but as I got older started to appreciate the dark meat more. If I had my choice though, I'll still take the breast meat over anything.

I know I'm a heathen, but white meat is my favorite, dark meat is too greasy for me. My mom taught me how to cook the bird so that my white meat is juicy and flavorful :-)

White meat. Just cook the bird breast side down, and the white meat won't be dry. If you insist on crisping the breast skin, flip the bird right side up and broil for a few minutes at the end.

Once upon a time there was a turkey. It was a little turkey, only about twelve pounds or so. Turkeybabe's mother worried about it. (Note: For the purpose of this story, all birds mentioned are to be sexless. Not that they aren't sort of anyway.)
Turkeybabe itself was a bit worried. It knew it had to grow up and be eaten, yet it could not decide what color it wanted to most be when it grew up. Most turkeys, of course, just take what's coming to them. White chests, tanned legs, glutinous feet.
But Turkeybabe knew that if it only wished hard enough and long enough - if only it put its pinprick of a mind to it when it was not trying to figure out whether to get out of the rain or to instead stare up into the raindrops till it drowned - that it did indeed have a choice. This, then became the reason for Turkeybabe's existence for it knew in its deepest giblet what it wanted to be, so it yearned and yearned and cackled out its desire to the Turkey Goddess whenever it was not eating bugs.
You may not believe this, but it happened. It happened because of Turkeybabe's huge yearning. It happened only once and it is doubtful if it will ever happen again - at least not in our lifetimes.
Turkeybabe became all skin. One solid block of delightful crispy turkey skin.
And it was pleased.
So was I.

Dark meat is almost always my personal preference, overall.
White meat is generally best for sandwiches.
Dark meat is best for turkey soup or gumbo.
White meat is best for keeping hubby happy, and that's always a good goal!

Most people say "dark meat!" because they've never had really good white meat. Last year I made a brined turkey that was so flavorful and juicy that no one touched the dark stuff.

It's all about layers.... .dress in layers in case its cold..... and eat turkey with layers... a slice of white meat, a sliver of dark.... balance the two for the ultimate in moisture, flavor, and texture, and it looks pretty on the plate....

Skin. Moist stuffing from inside the bird w apples, celery, onion, sausage, bread and sage. Gravy from the crispy bits on the bottom of the pan, loosened w giblet broth and cider before whisking all slowly into the roux. Little breakfast sausages poked into the breast on toothpicks to baste it. Dark meat from thighs.
