Do you know where you're getting your turkey this year? Not yet? Then we've got a contest for you! The good folks at D'Artagnan are providing us with a turkey a day to give away to one lucky Serious Eats reader. Today happens to be the last day of the contest, so get in while the gettin's good.*
D'Artagnan is a purveyor of many things deliciousfrom pâtés to sausages, foie gras to wild mushrooms, game meat to truffles. But what we're especially interested in right now is their turkey.
D'Artagnan's certified organic birds are fed organic grains and pure spring waterno protein supplements, added poultry or fish byproducts, pesticides or herbicides. Additionally no antibiotics, no growth hormones. The result is a poultry with great flavor, tenderness, and a 25 percent lower fat content than standard commercially raised turkey.
We will be giving away 12- to 14-pound organic free-range birds for the duration of the contest. Contest open only to participants in the continental U.S.

Dark Meat is juicier and more pronounced in flavor. In fact I will usually buy a 3-pack of drumsticks to make my own turkey broth for the stuffing, gravy or a soup course.

White meat or dark meat? I have to go with dark meat just for the heavier game flavor and the ability to stand up to reheating for leftovers. My favorite use of left over dark meat is to saute fresh aromatics like diced celery, carrots and onions. To the pan I'll add large diced pieces of bread dumplings (spaetzle would also work) and cook until the veggies are soft, the add the shredded turkey, heat through, then add turkey gravy to the mix and again heat through. I always make plenty of stuffing to have for leftovers so I'll cut a nice thick slice of stuffing, microwave for a minute on a plate then serve the turkey mixture poured on top. YUM! Put a little cranberry sauce on the side and you're in leftover heaven.
Hmmm, how about a turkey and foie gras terrine with truffle sauce? D'Artagnan a little help.

I used to be a white-meat only kind of girl, but then I tasted the dark for the first time recently, and it was so moist and juicy and flavorful. Now it's dark for me!

Dark meat has all the flavor and juice, so I go with that if it's a whole turkey. You could also just roast the breasts by themselves; when you do that, it becomes much easier to cook them properly, without drying them out. Even then, the white meat has relatively little flavor though.

mmmmmmm dark meat. It so succulent and full of flavor. A shame all these turkeys are bred for a plethora of white meat, they should really just have giant thighs! (laughing picturing how those birds would look)
White or dark, the best thing about turkey is the leftovers. Turkey soup with wild rice and mushrooms is just.......over the top yummy.

A tiny sliver of white, drowned in gravy or mashed squash. I only ever ate one turkey that I tasted and liked. Most of my thanksgiving memories are of bird-shaped sawdust.

I'm a stickler for white, but my grandmother instilled in me the glory of dark meat as well. All I know is that I'm almost always the one finishing off the leftovers and being picky gets in the way of tastefully cleaning out the fridge. ;)
