Win Your Thanksgiving Turkey!

Do you know where you're getting your turkey this year? Not yet? Then we've got a contest for you! The good folks at D'Artagnan are providing us with a turkey a day to give away to one lucky Serious Eats reader from today until Sunday, November 18.*

20071109dartagnan.pngD'Artagnan is a purveyor of many things delicious—from pâtés to sausages, foie gras to wild mushrooms, game meat to truffles. But what we're especially interested in right now is their turkey.

D'Artagnan's certified organic birds are fed organic grains and pure spring water—no protein supplements, added poultry or fish byproducts, pesticides or herbicides. Additionally no antibiotics, no growth hormones. The result is a poultry with great flavor, tenderness, and a 25 percent lower fat content than standard commercially raised turkey.

We will be giving away 12- to 14-pound organic free-range birds for the duration of the contest. Contest open only to participants in the continental U.S.

Win a Turkey

To enter to win, just answer the following question in the comments below:

What's your favorite use for leftover turkey?

One (1) winner will be chosen at random from among the commenters. Feel free to enter every day, but you may win only once during the lifetime of the contest. Comments for this entry will be open until noon ET tomorrow (Nov. 13). The standard Serious Eats contest rules apply.

*Sorry, but we have to limit shipping to the continental U.S. Birds will be shipped from D'Artagnan no later than Monday, November 19.

Cold turkey sandwiches!

I love to make Turkey Escarole soup with the left over turkey!

Sandwiches with jellied cranberry sauce and lots of mayo!

Sandwiches...turkey, stuffing and cranberry sauce on some nice crusty bread, warmed up in the oven. Yum.

Turkey enchiladas with a smoky chipotle sauce!

take the carcass, pull off the meat and make turkey stock. Then turn some of that stock into soup with the addition of carrots, parsnips, peas - whatever vegetables I deem appropriate. Shred the turkey meat, toss in some barley, simmer till all is tender and voila!
The leftover stock freezes beautifully, by the way.

Turkey pot pie!

Sandwiches. If I have enough turkey, I'll eat turkey sandwiches every day for the next week.

Turkey carcass soup. I also love turkey salad, finely ground turkey in food processor, mix with onions, mayo, and what ever else you like. sometimes I make a wierd turkey casserole with pretty much all the sides as well...

Turkey wraps with bacon, avocado, lettuce, tomato and a chipotle mayo.

Take a corn tortilla and warm it (for tastiest results, heat it briefly on both sides on a griddle with a little bit of butter or oil), then add leftover turkey, a spoonful of mashed potatoes, and a dollop of cranberry sauce. Roll it up and devour.

Thanksgiving sandwich, with all the trimmings, on fresh rye bread, followed very closely by turkey hash.

Cold turkey sandwaiches with mayo, crispy iceburg lettuce, pickles and pickles.

I absolutely love turkey sandwiches, but they have to be made correctly. I take some good white bread and spread on a liberal layer of mayo. I usually make homemade mayo just for this occasion. Sometimes I add bacon and/or lettuce. Now I'm getting hungry...

Pepper-corn Turkey Salad for my husband, cold turkey sandwich with leftover sausage stuffing for me. This is the greatest holiday for me, the working mom, because cooking one Thanksgiving meal means many more days of delicious food (thanks to leftovers) without having to cook!

sandwiches ftw!

Turkey rice casserole, I don't know why, but it always tastes yummy with the leftovers.

Leftovers...we don't get any steeenkin' leftovers!

I make a turkey BLT Sangwich.

My wife and I are going with turkey pot pie!

i'm a big fan of turkey noodle soup.

Layered in a custard cup (or if you're eating it in bed, a coffee mug) with mashed potatoes, sweet potatoes, stuffing, and gravy. Nuke. Top with cranberry sauce. Repeat as necessary.
Also turkey curry, in tribute to Bridget Jones' Diary. ("Mmmm, turkey curry. My favorite.")

Definitely sandwiches. This is gonna sound so declasse, but still - cold sliced turkey and iceberg lettuce, on white bread, slathered with Miracle Whip.

Turkey everything!!!!! Mainly sandwiches to be my favorite---This year it's at my house-can't wait!!

The Traditional Post-Thanksgiving Sandwich: Light and dark turkey with dressing, cranberry sauce and lettuce on toasted white bread. Leftover mashed potatoes optional. (This year my son has made me promise to get an organic turkey for the holiday -- how can I refuse?)

The day after Thanksgiving is my favorite food day of the year. I bake a loaf of bread, heat up turkey, mashed potatoes, gravy, and stuffing, and put that on a sandwich with mayo and cranberry sauce. Best thing ever.

...cook, chef, culinary sponge, traveler, volunteer, missionary.
tyronebcookin

No question, it's creamed turkey on toast. My Mom always made it. The word creamed is missleading because there was no cream involved,it's just cut up turkey, broth (homemade or canned) thickened with cold milk &cornstarch, or you can make a roue with turkey drippings and flour, a little salt &your done. Put on toast. Simple but divine.

Turkey-noodle soup! Yum, yum, yummy, yum yum!!

sandwiches--stuffing, cranberry, lettuce, gravy. Particularly tasty as a late night snack. With pie, of course.

Sandwiches, on toasted rye with ballpark mustard!

Why..... "Leftover casserole," of course! We take any post-feast ingredient left and layer in a divine combination...turkey, gravy, green bean casserole...etc...always ending with mashed potatoes on top for a crispy, buttery crust. You'd be surprised how a hidden layer of cranberry sauce really livens up what one would think is a gut-bomb of a dish. Can't wait!

Turkey soup. Nothing like a hearty bowl of soup with homemade noodles when it's starting to get cold outside.

New Mexican style green chili + turkey enchiladas

Sandwich on good bread. Turkey stuffing and cranberry sauce mmmmmm.

Most of the time just a nice turkey soup

Sandwiches with the leftover meat, and stock with the carcass for the best, richest gumbo around.

Sandwich, on pepperidge farm white bread, with cranberry sauce, stuffing, olives, and rice pilaf on it.

Dark meat or white with lots of cranberry sauce

Turkey tetrazzini

i like to stuff a turkey with onions and celery then smoke it for about 12 hours, for leftovers, turkey gumbo with andouille sausage is mandatory.
i don't skimp on the cheap .39 a pound turkeys, get a good one.

I'm willing to keep having turkey dinner as long as the sides last (gravy & stuffing, my sweetie's orange cranberry sauce most important), and then nice thick turkey sandwiches, preferably on thick-cut pumpernickel or Italian bread or rosemary rolls with the cranberry sauce.

Bowl-lickin' good:

In a microwave-safe bowl layer the following. Zap until heated through, add a dollop of cranberry sauce and dive in...................

Picking at the carcass with a glass of red in hand.

Last year I made a turkey and bean soup that turned out delicious. And of course sandwiches with leftover stuffing and cranberry sauce - yum!

i lied, hell a free turkey sounded good but i don't believe that the price you pay makes any difference in the end result. brine it overnight then cook it properly and the price per pound ain't gonna make a bit of difference.

sorry for the previous post, i had a weak moment.

turkey enchiladas... oh yum. can't wait.

Sliced white meat turkey on a hard roll with lettuce tomatoe & mayo

I like to boil the carcass just to the point where all the meat is off and it's really clean. Taking my time, I dry it out thoroughly and paint the bones a bright color, using about five coats of a high gloss latex. Then, out comes the sewing machine and glitter gun to produce little outfits for it to wear during the holiday season. Coming up with new ideas year after year is a real challenge!

personally, i love the sandwiches. simple white bread, mayo, pepper, lettuce, tomato. nothing more.

Thanksgiving sandwhich on a hoagie roll.

I make a variation on b'stilla with leftover turkey and gravy.

Though to be honest its been years since I had turkey leftovers (my family always goes to a relative's house and that relative's family doesn't like turkey! before that my mom always made a turkey and green pea topping for rice) So I'm coming up with my new favorites uses for leftover turkey. I will be having sandwiches and will attempt to make stock with the carcass.

I like using leftover turkey for a soup.

turkey soup

Soup from the stripped bones. What's left on the carcass makes the best broth.

My fave is hot turkey sandwiches: sliced turkey over toast drenched in hot gravy with cranberry sauce on the side.

I just eat the turkey straight :D

the whole meal for a second time around!

Cold turkey sandwich with mayo!

I just love a plain jane turkey sandwich - with lots of salt and mayo...and the turkey has been heated up a little...not enough to sog the bread...but...you know...

sandwiches slathered with turkey, stuffing, mashed potatoes, gravy, and cranberry sauce.

Turkey Pot Pie!!!!!

Oh come on! What's my favorite use for leftover turkey?

Ever had Vietnamese congee (chao ga) served with chicken salad (goi ga)? I used to eat this a lot as a small child. So once I made a turkey congee using turkey stock and leftover turkey, and served it with a side of Vietnamese turkey salad with heaps of fresh herbs. Sounds like an odd combination but it works...
