Weekend Book Giveaway: The Oxford Companion to Italian Food

We're starting our weekend book giveaway early this weekend? Why? It's Thanksgiving weekend, so for all intents and purposes the weekend has started for most of you. Plus, we're really excited about the book we're giving away, The Oxford Companion to Italian Food, by Gillian Riley. Riley has really done her homework, so you'll find entries for everything from passatelli, special fat little noodles of bread, eggs, and cheese, a specialty of Romagna, to calamint, or nepitella, a pungent herb similar to pennyroyal (what's pennyroyal?) that has an affinity with artichokes. Thanks to the generous folks at Oxford University Press, we're giving away eight copies of this weighty (more than 600 pages) tome. To enter just leave a comment on this post by 6 p.m. est on Monday Novvember 26th, telling us what your favorite Italian cooking ingredient is. The usual Serious Eats contest rules apply.

Garlic.. its good in just about everything and nothing italian is italian to me without it.

Aceto balsamico, a nice aged balsamic vinegar. You can use it on pretty much anything, even sweets...

Hot Italian sausage!

Parmigiano Reggiano, Carnaroli, lardo, guanciali, buffalo, Pecorino Sardo, Amarone, Prosciutto di Parma or San Danielle, orzo, tonno, basilico, Tuber magnatum, chi chi's, ricotta (fresh made of course-if only i could get ewe's , milk), San Marzano, carciofi, broccoli romanesco, fava beans, EVOO, bacala, calamari, arosta, shall I go on?

I love all things Italian, but I'd have to say parmigiano. Or pasta. Or tomatoes...

Parmesan, followed closely by almost all other Italian cheeses.

Garlic. Hands down. Olive oil comes a close second.

Olive oil. fire, a local not-Italian restaurant, offers fantastic olive hour with their bread service. With a little salt, it's as good as the rest of the meal.

Man....let's see. My favorite ingredients come in this amazing salad I always have at my favorite Italian restaurant: tomatoes, fresh mozzarella, balsamic vinegar, and fresh basil. Yum!

I was going to say garlic, but then I realized that garlic is present in most cuisine, so I will say Parmesan - I just don't feel right without a block in the fridge.

Just one? Oh geez...while pasta is a completely integral part of my life, I have to say that slivers of parmigiano reggiano with a fruity red wine is one of the best treats in the world.

I have two- they're tied and can't be seperated...Garlic, and olive oil!

Depends on the criteria.

The ingredient I use the most? Either basil or Roma tomatoes (canned or fresh).

The ones I lust after most? Dried porcini, fresh figs, fresh (firm) ricotta.

Gotta have my tomatoes!

It is decidedly a tossup between hand-grated Parmigiano-Reggiano, and an excellent extra virgin olive oil (which, BTW, I will NEVER refer to as "EVOO" - I mean, how much longer does it really take to say the full name?)

There's olive oil and there's Italian olive oil. *Real* Italian olive oil, like the kind an Italian family makes from their own olive groves. That to me is what's essential in a delectible Italian dish.

Tomatoes, in any form, sauce, chopped, whatever, and always have oregano on hand.
