My box of Morton's kosher salt has a recipe on it for salt roasted eye of round. It came out pretty tasty but it's kind of a mess to deal with.

I think fish might be the most popular meat to salt roast? Perhaps it's not as messy as beef. I'll have to try it at some point.

Salt-roasted whole chickens turn out splendidly. I'm surprised there wasn't a recipe with the story. The meat literally falls off the bones, and even the breasts are amazingly moist, tender and flavorful.
