Cook the Book: 'Crescent City Cooking'

book-crescentcity.jpgI've been eating Susan Spicer's spectacularly delicious food in New Orleans first at the Bistro at Maison de Ville, then at her own Bayona, for more than 20 years now, and frankly I could never figure out why she'd never written a cookbook. With the publication of Crescent City Cooking my days of wondering are now over. Spicer has always had a way of combining classical French cooking techniques and traditional New Orleans food preparations and ingredients into her own effortlessly elegant cooking style. She manages to elevate comfort food into something special without tricking it up.

We've got eight copies of Crescent City Cooking to give away.

Spicy Jambalaya!!!

As a Louisiana native...it's hard to come up with a favorite. But right up there is shrimp etouffee. So delicious!

I just loved all the seafood that was available when I visited New Orleans. Huge platters of oysters, gourmet soft shell crabs, scallops and on and on. It was a real foodie paradise for me :)

I love the BBQ shrimp at Pascal's Manale. It never fails to evoke those memories of old.

Can I cheat a bit? Parkway Bakery with my sweetheart...one of us gets a roast beef po'boy dressed and dripping with gravy, the other gets the fried shrimp po'boy, and we split halves.

Technically, it's two dishes.

Red Beans and Rice

Mmm...seafood gumbo definitely...I think it's the only time I eat okra sadly.

Veggie and seafood gumbos.

It's a toss up between really good gumbo and a crawfish boil.

Beignets can't be beat in my book!

I loved everything about New Orleans. I really loved Bayona - I had a stuffed baby chicken. When I was there (almost 5 years ago) there were stuffed grape leaves with the baby chicken and it was glorious.

Um, my fave typical New Orleans dish? Oyster po' boys and / or jambalaya!

debris po'boy. Debris is basically all the little bits of all the various meats that get cooked on the griddle. These little bits are swept to the side and kind of left there to stew in their greases and juices, until they are scooped up and put into the sandwich. Mmmmmmm, debris.

That's a hard one, but I'd have to go with jambalaya!

Though it can now be found pretty much anywhere, and is not strongly associated with the city, Bananas Foster was created in New Orleans, and it's one of my favorite deserts. On the savory side, I love some good blackened fish.


Oh god. Where to start?! I visited NO in 2002 and I still remember the food and cook it with love.

I totally love the comfort of red beans and rice. Nice and smokey flavour with some good andouille sausage in there. I sit down with a bowl and it's seconds or thirds for me.

Beignet of course as well and wonderful gumbo are also on the list. Beautiful catfish po'boys.

i live about 45 miles north of new orleans and my favorites are a dressed beef poboy, i want gravy running down my forearms, bbq shrimp with crusty french bread, any type of gumbo with a potato salad side, properly blackened steak, redfish cooked on the pit, red beans and rice with andouille, shrimp or crawfish etouffe and smothered anything....if we have enough onions, bell peppers and celery, we can smother a pound of concrete. (but you gotta have rice with it)

BBQ Shrimp from Manale's is my all-time favorite New Orleans dish in the whole world (Who am I kidding, it's my all time favorite dish in the world). I still think about to this day.

OK, wait, I have a second favorite. The chargrilled oysters from Drago's in Metarie.

God I miss New Orleans. It's time for a trip.

Chicken Gumbo - the way the locals make it! Sadly, I've never tasted anything like it since I used to live there.

I thought this was going to be the hardest question in the world. I mean, how can you compare a Napoleon House muffaletta and Pimm's Cup lunch to a Cafe du Monde beignets and coffee breakfast? Acme's oyster po boy to Arnaud's Pompano en Croute? Coop's fried chicken to a Treme street party mudbug boil? Jambalaya to gumbo to red beans and rice?

Then I remembered that the last time I was down there I ate at Cochon, and the roasted oyster appetizer was the single finest thing I have ever put in my mouth. Ever. Really. Not just worth the cost per bite, worth the cost of your airfare and hotel. Really.

Gotta go with the basics- red beans & rice or a po-boy (either roast beef or shrimp)

hmmmm... it has to be blackened fish in cajan spices. They make it to perfection in New Orleans.

I haven't had a chance to revisit New Orleans for a decade now, after having fallen in love with their food. So I've taken to cooking it myself. Being in the Midwest, I have to have my andouille, shrimp, and crawfish shipped to me to get the real authentic flavors.

My favorite dish is fried catfish smothered with crawfish etouffee. It captures so many cajun flavors all in one. I accompany it with baked rice to soak up the juices.

The fried oyster po'boy was good, but you just can't beat a good bowl of red beans and rice on a cold day.

I've never been to THE place, but I've had gumbo and it was delish!

I've always enjoyed seeing this talented chef on appearances on the Food Network.

I'd have to say any po-boy. They are just damn comforting.

beignets...I've not been to New Orleans yet, so I don't know if shrimp and grits counts or not, but I do love me some of that, too.

I love everything about New Orleans food, so it's hard to pick a favorite, but I will go with the Crawfish Monica served at Jazz Fest.

After 4 years at Tulane, it's hard to pick just one!

Aw dang, how does one choose? I love any variety of po'boy, but it's gotta be gumbo that wins in the end. Mmm....spicy....

I love a good gumbo, but it doesn't get much better than beignets and a cup of coffee.

Jambalaya with plenty of shrimp, chicken and andouille. Although a nice sloppy big beef po'boy would not go amiss.

If it has to be food, then it's gumbo.

Having lived in New Orleans for several years, I'd have to say that my single favorite dish was the fried oyster appetizer from Ugelsich's (with blue cheese stuffed between the fresh-shucked oysters and the batter).

Bayona is that rare restaurant that's just as delicious as it is fancy. It's hard to forget Susan Spicer's duck sandwich with pepper jelly, her garlic soup, her goat-cheese toasts...And when I first saw her emerge from the kitchen at Bayona, with a bandanna around her head, I knew she was hardcore. Buy this book!

well said edina. Bayona is consistently in my top 5 for my home town. Not to mention, it is nice to know that she is actually in the kitchen most nights - eventhough she is involved in other ventures around town.

I do love me an oyster po-boy, but Chef Spicer's duck sandwich does not suck.

Fried shrimp po'boy. Very, very hard to get New Orleans food up in this part of Canada, but I had one of those once on a road trip in the States, and YUM!

I ate like crazy in New Orleans, and loved it all, but what I loved the most was the bread pudding.

The food of New Orleans, I hesitate to call it cuisine, is endless entertaining to me, as well as endlessly tasty. It taught me so much about spiciness and complex flavors in rustic food. I am looking forward to my first batch of Cheesy Spoon Bread, as I am looking forward to becoming acquainted with Susan Spicer. My choice is crawfish A-2-Fay!

Beignets. This is the only time you'll hear me answer a "favorite food" question with a sweet baked good, but man are those beignets good (with a cafe au lait in the middle of the night).

I can't choose just one - red beans and rice with sausage, beignets (from Cafe du Monde only), cafe au lait made with Chicory coffee, barbeque shrimp.....

I do love a good gumbo. But an oyster poorboy sounds so good to me right now ! I 'm seriously thinking about where I could get one in WV.

I LOVE jambalaya. I have a friend who's a HUGE fan of New Orleans, and he makes a mean jambalaya. I'm drooling just thinking about it now...
