Cookbook Giveaway: 'Super Natural Cooking'

Alaina mentioned earlier today that we'd be giving away five (5) copies of Heidi Swanson's Super Natural Cooking: Five Ways to Incorporate Whole and Natural Ingredients into Your Cooking.

Don't let the subtitle scare you. Swanson's book is full of recipes that are good for you without sacrificing flavor. And if you're new to this style of cooking, there are primers galore throughout its pages.

I think I find sushi to be the most healthful and pleasurable. My favorite guilty pleasure is Salmon Roe with Quail Egg.

Fresh fruit of almost any kind--nature's candy! For me, red grapes are the food that I can't 'have just one' and the skins have anti-aging properties, too!

Oatmeal! I have a packet of Country Choice maple oatmeal every morning and add my own ground flaxseed and cinnamon. Yum!

I think Chickpeas (and by extension Chummus) is by far the most healthful and pleasurable for me.

lemon (or lime) juice. Each adds so much to every dish it touches without adding fat.

Khao Soi Kai (Chiang Mai style curry noodle soup) made with home made chicken stock and local chicken, will cure any cold or just warm you up on a rainy Portland spring day.

Fresh vegetables, like brocollini, that simply requires steaming for a healthful (and tasty!) meal.

Salad as a main course, with several different kinds of lettuce, celery, and carrots, dressed with olive oil and vinegar.

Asparagus! In everything...salads, pasta, as a side dish... My fav is sautéed in olive oil with kosher salt, lemon and red pepper flakes.

Fresh fruit - especially berries! Also have to agree with sushi. Yum.

Whole wheat bread, especially when high quality/fresh with that great nuttiness.

Broccoli not far behind for me, I can eat it like candy.

My top three:

Roasted sweet potatoes

shaved fennel salad

garlic hummus

Good dark chocolate- it's like good sex. Healthful benefits & immediately uplifts my mood.

Clementines -- they're like candy, in their tiny little citrusy package. Yum!

Peanut butter.

Sweet potatoes sweet potatoes sweet potatoes. As oven fries, dipped in thousand island dressing. (Okay, that's not so healthy.)

Also: steel cut oatmeal, grapefruit, and sugar snap peas.

Tofu and vegetables! Seriously, any restaurant that will serve me stir-fried tofu and vegetables with rice and some kind of tasty sauce is a good restaurant in my book.

I'm in the asparagus camp too! Love the stuff warm or cold, with everything from couscous to steak!

Does chocolate count? I like tofu. I eat it scrambled, creamed (tastes just like ricotta!), raw and cubed, silken and pureed (great pudding base), or marinated. Yummm.

After thinking about this for a while, I'm with Dave. Sushi is the item that pushes the pleasure/healthy envelope. I love things like hummus, but they taste "healthy." Good sushi can taste so good, my mind thinks it should be bad for me. :-)

homemade vegetable soup, must be pureed and enriched with a dollop of cream. healthful and indulgent.

I like making Indian dals ... the spices are so aromatic, and lentils are so hearty and satisfying. I also make sauteed greens most every day. Lots of garlic and I am set!

Artichokes! I make a snack out of a whole artichoke and get lots of nutrients and fiber in the process. What I really love, however, is the sensual act of eating an artichoke.

Oats in all their filling, fiber-y delicious glory. Oatmeal, oat bread, oatmeal cookies (ok so cookies aren't "healthy," but one can always dream). Also high on my list: cauliflower and spinach.

Most healthful AND most pleasurable? Picking strawberries right off the vine at Forge Hill Orchard in Mount Wolf, PA in the early afternoon when they've had just enough time to be warmed by the sun. Juicy enough that a little bit might run down your chin if the berry is big enough. But a taste that explodes in your mouth like no other fruit.

Bell peppers. Versatile enough for almost anything I'm cooking -- raw, cooked, in salad, sauteed, stewed, and the list goes on. With the widely available selection of red, green, yellow, ane orange, it also adds amazing color to any dish.

All in all, the perfect, healthful, colorful, versatile, all around delicious and perfect healthy food. The bonus is the whole packed with vitman C thing.

i love fresh fruits too, especially pineapples and oranges

My all time favorite is noodle salad with lots of vegetables and tofu. I like soy sauce based dressing with a hint of sesame oil.

Easily fresh fruit - I'm a fiend for fruit, especially summer berries eaten right out of the garden

Runners up: salads, hummus, fresh home-made whole-wheat bread, and oatmeal. Yum!

And I'll tell you why- its my once-in-a-while treat, after which the week after I'm motivated to stick strictly to fruit, veg, tofu, sushi, and all other things that spell h-e-a-l-t-h-y. (:

Greens--kale, broccoli rabe, chard; sauteed in olive oil with garlic. The list could go on, basically anything I find at the farmers' market qualifies.

Chickpeas, almonds and quinoa. Quinoa in particular is a snap to cook, makes a delicious salad and is a nutritional phenomenon. Quinoa porridge, which is made with quinoa grains that have been pounded flat so they cook faster, is an incredible breakfast - about an hour after I eat it, I can feel a physical energy surge that lasts me through the rest of the morning. And it's delicious.

any type of fresh fruit, esp. berries

Greens greens greens. Can't get enough of them, rabe, collards, arugula, kale, escarole, etc. Good and good for you.

For me, there is no greater healthy pleasure than rice. It can be done so many ways (granted, not all of them are as healthful as others), but a creamy risotto, a fluffy pilaf, a sticky sushis rice, all make my mouth water, without clogging my arteries or packing in the calories.

I'm in the greens camp as well.... absolutely love Chard, Collards, Kale, Mustard, Turnip and Spinach.... just so yummy and good for you.

I believe you can't go wrong with some Avocado - sure the fat content is high for a fruit/berry but its mostly the good fat...and the taste can't be beat!

oo there are so many choices! definitely fresh fruit, and plain greek yogurt.

Watermelon. Thirst quenching, sweet, pretty color, and always a reminder of summer.

Kale, steamed slightly, then plopped on top of toasted ciabatta bread with a drizzle of olive oil and sprinkles of black pepper, red pepper flakes, and sea salt. Dinner!

Sweet Potatoes! Sushi! Bananas! Yogurt!

any fresh fruit that is ripe, has been chilled in the fridge, and is bursting with juices! Right now grapefruit is incredible from the winter.

Eggs. Don't go crazy and eat three of them fried in butter. A single soft-boiled egg with asparagus spears to dip is the perfect comforting, healthful dinner.

vinegar of many varieties, pretty much good with everything.

Yeah, I know they aren't always healthy, and even in a majority of the south they come candied, but i feel healthier when I eat sweet potatoes.

Especially when they are made into dumplings.

I've fallen in love with pomegranate kefir. It's great over granola for breakfast!

Edamame! It is so delightful. I work it into a lot of dishes.

Legumes-healthy in so many ways and oh so versatile!

tofu. it goes with anything

chickpeas. In hummus, tossed with parm and lemon juice, thrown into curries, whatever ... it's filling and delicious while being a good source of fiber and protein.

I love just about all fresh fruits, vegetables and dairy, nothing mentioned here that I don't like. I've started buying only cage-free eggs and not only do they taste better but I feel better about eating them!

Also this week I made some tzatziki sauce with yogurt, cucumber, lemon juice, garlic and fresh mint from our garden - heaven!

I really enjoy edamame. They're fun to pop and munch. Like a little prize inside the shell!

Definitely fresh pineapple for me.

Fresh picked straberries. They're so decadent and I love the bright red color.

Spinach! I love it any way, shape, or form (except canned! yeeech!).

Roasted Veggies pureed with some hot stock and made into a soup.

Blackberries & raspberries are tops. Next up is steel cut oatmeal - usually with dried blueberries.

Black beans-- huevos rancheros, rinsed and added to a fresh salsa with avocado and bell peppers, cooked with onions and hot sauce, in a quesadilla, really any way I can get them.

Wow! Everyone posted such wonderful answers. It's great to see people focused on healthy, tasty foods.

I'm a huge fan of summer fruits paired with a light oatmeal crust. Of course, a plain bowl of fresh pineapple chunks, blueberries and cut bananas is all I need for my morning on any given day.

I'd also be in favor of grilled salmon over raw arugula.

vietnamese vermicelli with lemongrass and grilled shrimp...it's always so fresh and light.

Lentils. Why are they SO GOOD?! I absolutely do not understand how something so humble can be so amazing, but if I had to pick one protein for the rest of my life, it'd be lentils, without question.

I love plain yogurt. I can sub it in for cream in a soup or sauce, turn it into a refreshing dip with cucumbers, tomatoes, onions lemon juice and mint, or make a smoothie out of it with any number of fresh of frozen fruits. It's versatile, available in low-fat and organic versions and is full of protein and digestion-aiding bacteria.

Most anything with beans. Bean chili, chickpea soup, chana masala, and oh yes, lentils.

Fresh blueberries in the summer. Can't wait!

greek yogurt and fresh raspberries, with a touch of honey..this combo finally has me eating breakfast!

Cauliflower roasted in foil in the oven or on the grill, fresh berries and yogurt, granola made with molasses and lots of raisins and healthy nuts, fresh trout in the summer - prepared simply with a bit of garlic, butter and lemon then grilled after a day of hiking, pomegranate berries, fresh leafy salads with carrots, celery, cucumbers, peppers and tomatoes, glass of milk with ice cubes to comfort you on sad nights, bowl of peaches drizzled with honey, ants on a log, ok, that was way more than one and now I am hungry and have way too much work to do. :-)

There are so many, many things that fit into this category but the first ones that come to mind are: edamame (the whole experience of popping them from the pod adds to the senosry appeal of the food), greek yogurt (wonderful, creamy mouth appeal). And fresh organic berries. I could go on and on..

Grilled fresh fruit and/or veggies (yep, the fruit too - grilled peaches or pineapple? Yes, please!).

Fruit salad - the perfect summer dessert! When I was younger my mother used to get me to eat more fruit by letting me spoon Cool Whip on top of my fruit salad. I still do that for an occassional treat!

Salmon would have to be my second choice - it's good grilled, broiled, baked and, of course, in sushi!

Grilled pineapple with frozen (or not) yogurt...it tastes sinful!

I love sweet potatoes. Mash them up or turn them into french fries and dip them in hot sauce. They are the perfect for sweet savory combinations.

Luckily for me, there are many healthy things that I thoroughly enjoy. If I had to pick one at the moment, it would be my morning bowl of oatmeal - usually eaten with a pile of fresh berries, a sprinkling of wheat germ, and a drizzle of maple syrup. Yum.

By far my favorite healthy food is sushi! It is so refreshing and even if I eat a ton I never have get stuffed, sluggish feeling that so often follows a big meal.

I'm on a huge spinach kick. Spinach salad, wilted spinach with garlic, spinach and chickpea soup. I yam what I yam.

Fresh raw in season sugar snap peas tossed with a little vinegar and fruity olive oil, sliced radishes, crushed pepper and some crumbled sheeps mik feta.

In my view edamame is a super-food. Its versatility (tofu, soy milk, "cheeses", etc..), health benefits, and ability to cross borders of nearly every single influential style of cuisine on the planet, make it something very special. Not to mention the fact that it tastes absolutely delicious just sprinkled with salt; my preferred way to eat 'em. Serious Eats? Indeed!

You know, I think I have to say that popcorn is my favorite healthy and satisfying food. It's so crunchy and nice to chew on, can be served salty or savory--it's perfect!

A close second would be really dark chocolate, though. Actually, popcorn with chunks of dark chocolate? Oh, decadence....

oatmeal with cinnamon, ginger, honey and peanut butter. and sometimes dark chocolate.

kim-chi and miso soup.

Fresh berries and greek yogurt with homemade granola.

Any roasted or steamed vegetable. Vegetables taste so clean and and light and pack a great flavor punch.

A soft poached egg every morning

i love spinich all kinds of ways. ever try spinich and barley, fantastic

carrot and sweet potato soup with ginger.

Any kind of soup made with homemade vegetable stock, lentils, beans or peas. Pan roasted broccoli with spicy Asian chili sauce and roasted unsalted peanuts, or with a creamy Gruyere sauce ---fabulous! And for desert Banana Mousse made with egg whites, juice of lemons and oranges and yogurt. Now I'm hungry.

avocados - good fats, vitaminny-goodness, and omg delicious.

Steel-cut oats with fresh banana; Greek pitas with grilled chicken and home-made hummus and tzatziki sauce

in the land of ...whole milk yogurt with raw honey ......

NY Fuji apples + smear of freshly ground peanut butter.

Roasted fingerling potatoes sprinkled with lemon zest, rosemary, sage and salt. Spinach Turkey burgers topped with Greek yogurt sauce mixed with cucumber and dill.

Easy: oatmeal w/skim milk, blueberries and toasted walnuts. Eat for breakfast, lunch or dinner-great comfort food.

Few things are yummier than grilled/roasted veggies. I also love fresh pineapple. There are too many things to list here, and reading others' comments has made me soooooo hungry!

Greens, greens, greens. I just cannot get enough of them. Kale or broccoli rabe sauteed with garlic and olive oil. Braised mustard greens with vinegar. Steamed chinese broccoli with a little oyster sauce and sriracha. Collards. Dandelions. Slightly bitter. Slightly rich. They are by far the most satisfying vegetables on earth.

TOMATOES! But only when they're in season. Nothing beats a tomato fresh from the garden, still warm from the sun, sliced with a tiny bit of sea salt sprinkled on it. Double points if the tomato is an heirloom!

Spinach lightly sauted in olive oil with red pepper flakes. Same for broccoli!

Sliced okra, sauted in olive oil w/ chopped jalapenos and garlic w/ kosher salt and freshly ground black pepper.

A roasted head of garlic is one of the healthiest and most pleasurable things for me to eat with just about anything. Crushing the garlic out of its skin and slathering it on top of some brocolli or peasant bread is a fine experience. I will also take quinoa as my power grain of choice. Good for breakfast AND dinner. Fantastic stuff.

the blend of sweet basil, balsamic vinegar, a splash of olive oil, a smidgen of sea salt and the pure and amazing flavor from a ripe heirloom tomato is just heaven on a plate! It's a beautiful sight as well.

Soy beans. I eat them like popcorn. No salt needed.

The most healthful and delicious thing I like to eat are roasted sweet potatoes. I never bake regular potatoes, but sweet potatoes baked in the oven with a little olive oil on the skin are so sweet and delicious! The fact they are so healthy is a great bonus.

I think most people might disagree with me but jook (rice porridge) is my pick. I know that it is flavorless by itself. But I sometimes make it with chicken stock or add dried seafood (chinese people will understand the dried seafood, it is "good" for you). My mother use to stir an egg into jook for me to make it more nutritious. I enjoy jook, I find it flavorful.

Hummus with whole wheat pita triangles, garnished with kalamata olives and feta.

A Japanese dinner always leaves me very happy and virtuous/healthy feeling at the same time... pick and choose from miso soup, edamame, sushi, udon.....mmm!

a piece of thick wholegrain/rye, smear it with natural peanut butter, a layer of banana slices and lastly a square piece of low-fat kraft cheddar cheese.
then in an oven toaster until cheese melts and bread toasted.

low GI bread + fibre, good fats & protein, potassium + fibre, calcium & protein

you cannot get any more wholesome than that

i can't think of anything more satisfying and healthier than eating sushi!
fresh seafood, vegetables, rice, plus the added care taken to its artistic presentation...all rolled into one.

I like making a stew of fresh veggies like zucchini, mushroom, onions, tomatoes, sweet potatoes, butternut squash, string beans, and tomatoes and spooning it out over some onion-scented quinoa. Adding some turmeric and garbanzo beans to the mix packs it with flavor and energy. It makes a fantastic meal for a cool night, and is delicious as well as nutritious. Accompany with a cold glass of pear nectar and it's like heaven on a placemat.

Well prepared vegetables of any kind. I eat as many as I caqn, whenever possible. I'm not a vegetarian but I do wish more vegetables were available at restaurants., usually only high end places have anything besides salads.

A well made salad of mixed greens with seasoned grilled chicken breast, assorted veggies, good olives and a simple, non-creamy dressing. No iceberg lettuce!

Pomegranates! and more every-day, grapefruit..... though really most fruits and vegetables, eaten fresh and raw...

Plain yogurt is my favorite healthy food. I eat it for breakfast every single day, with a palmful of wheat bran mixed in. It is delicious and so good for me!

A light, yet deliciously unctuous bowl of piping hot soy milk curds...I slurp this down every day when i'm back home in Asia =)

Fruit is truly the perfect food. Colorful, portable, nutritious, sweet, and delicious.

Vietnamese food--all the fresh veggies and herbs wrapped in rice paper, rice noodles, fish sauce. Yum! Fun to make and eat and healthy, too!

1st choice: Sushi

2nd choice: Avocado

Quinoa! There's so much you can do with it hot or chilled. I love its texture and nutty flavor.

It has to be steamed broccoli, slightly crisp with a sprinkle of S&P and a drizzle of olive oil. So perfect.

Peanut butter. About 5 days of the week for lunch, I have what I call a peanut butter quesadilla. It's peanut butter and sliced apple on a whole wheat tortilla. It's not only healthy and pleasurable, but also filling.

whole roasted head of garlic drizzled with extra virgin olive oil, black pepper, and a touch of sea salt.
plain yogurt with chopped bing cherries and agave nectar.
a little personal-sized sweet potato roasted until it's caramelized (and drippy, even).
for dessert, a bowl of raspberries with soymilk and cocao nibs.
black bread topped with freshly ground peanut butter and warm banana slices.
half of a beautiful, buttery avocado and a spoon (maybe with some white balsamic vinegar or lemon in the hole).
flaky wild salmon with pretty grill marks.
cold slices of braeburn apple, walnuts, and raisins on top of a bed of spinach (with balsamic, stoneground mustard, and olive oil dressing).
sweet corn on the cob.
a bulbous glass of good red wine.
brasilian-style (i.e. mama style) black beans with slices of mango. mm!


Any fruit.

Peeling a grapefruit and eating it like and orange, segment by segment. Eating it like this means I don't waste any of the delicious pulp and get all the nutrients from the pith!

Tofu. I ate some with spicy red curry sauce for dinner last night and it was so delicious!

Smuckers Natural Peanut Butter on toasted Right Wheat bread (from Natural Ovens) has been my everyday (!) breakfast for the last 5 years.

I make a mean vegetarian 3-bean chili that's to die for: 4-6 fresh cloves of garlic, diced tomatoes, onions, bell peppers, 3 types of beans, a handful of fresh or frozen corn, and cumin, chili, S&P to round it out. Some fresh herbs or scallions for garnish and this dish is so pleasurable I forget it's healthy. Isn't that the key?

Most healthful AND pleasurable? ...Hands down, a suchi cucumber roll - a piece of cucumber wrapped in sushi rice and seaweed. It tastes "Green" and fresh - by far my favorite food (besides broccoli, of course).

Brown rice is hands down one of the healthiest things there is to eat. Topped with a mixture of powdered toasted sesame seed and sea salt, some shredded carrot and cucumber and a little rice wine vinegar, it is divine. It's also a staple of the Zen macrobiotic diet.

Blackberries, fresh ripe summer tomatoes, mangoes, and naval oranges are my favorite healthful and pleasurable foods.

My favorite healthy and pleasurable dish would be tomatoes from my parent's garden sliced thick and topped with chopped flat-leaf parsley and basil and thin slivers of red onions. Dress with a vinagrette of champagne vinegar, dijon mustard, a touch of extra virgin olive oil, crushed garlic, salt and lots of fresh ground black pepper and garnish with some toasted pinenuts for good measure. It has all the great textures - the juiciness of the sweet tomatos, the crisp heat of the onions and the crunch of the pinenuts.

Extra virgin olive oil. The cardiovascular benefits are vast, and I don't know how I would cook without it!

My morning smoothie/shake, soy milk and any and all fruits I want. I can change it any time I want, and make it fancy or simple. AAAnd there's no guilt, ever!!

A big bowl of steamed green beans. Or raw sugar snap peas. I can never buy enough!

I definitely have a sweet tooth, so when I reach to satisfy it, but keep my health in mind, I'll do one of two things: A big bowl of berries with some Splenda and cinnamon sprinkled on top OR a bowl of sugar snap peas raw or steamed. Mmmm...and the natural sugar is so much kinder on my tummy!

The most important thing--always--is the company I keep, even if it's just myself. Sharing a little paper sack full of hot salty fries at a fast food joint in the Tenderloin with my best friend who is in serious need of some girl talk is way more wholesome than any multi-grain, fat-free, non-whatever eaten in distress. That being said, a ripe red tomato, just picked and still warm from the garden, sprinkled with a little salt and eaten like an apple over the sink is heaven on earth. Oh, and it doesn't hurt to have a little Devendra Banhart on the stereo and my honey walking through the front door. Yum.

I love a mix of fresh berries with Greek yogurt. My favorites are usually blackberries and blueberries from the local farmers' market.
