The Daiquiri is an underrated classic, a beautifully pure combination of rum, lime juice, and sugar. It's also wonderfully flexible, as this drink, from Justin Olsen of Bearded Lady in Prospect Heights, illustrates. This cocktail, one of six Daiquiri variations featured in Brooklyn Bartender by Carey Jones, gets a little boost from rich maple syrup and an extra-savory, smoky edge from half an ounce of peaty Islay Scotch.

While Olsen's recommended rum is the Flor de Caña 4 Year gold, we also love this drink with the richer, deeper Diplomático Reserva Exclusiva.

Special equipment:
Cocktail shaker, cocktail strainer, fine-mesh strainer

Ingredients

  • 1 1/2 ounces (45ml) rum
  • 3/4 ounce (20ml) fresh juice from 1 large or 2 small limes
  • 1/2 ounce (15ml) maple syrup
  • 1/2 ounce (15ml) peaty Islay Scotch, such as Laphroaig
  • Lime wheel, for garnish

Directions

  1. 1.

    Add rum, lime juice, maple syrup, and Scotch to a cocktail shaker and fill 2/3 full with ice. Shake until well chilled, about 15 seconds.

    Double-strain into a coupe glass, garnish with lime wheel, and serve immediately.
