Fruity drinks can lack complexity, but cocktail pro Jim Meehan has the answer, mixing in a bit of muddled bell pepper to accentuate the vegetal side of tequila in this drink, which appears in his PDT Cocktail Book. The result is much more than your average pomegranate margarita. The body of this drink is pretty thick, thanks to the muddled fruit and rich pomegranate molasses, which can be found in many grocery stores and middle eastern markets.
Notes: Pomegranate molasses is available from specialty grocers or from Amazon. Taste this one before pouring—depending on your brand of pomegranate molasses and the ripeness of your strawberries, it may need a little sweetening to obtain the proper balance. Adding in 1/4 ounce of simple syrup will make up for not-so-sweet fruit if needed.

- 2 strawberries
- 1/4 ounce pomegranate molasses (see note above)
- 2 (1/4-inch) slices green bell pepper
- 2 ounces blanco tequila
- 3/4 ounce lime juice from 1 to 2 limes
- Garnish: Extra strawberry slice
Add strawberries, bell pepper, and pomegranate molasses to a shaker and muddle until strawberry is broken down.
Add tequila and lime juice, then fill shaker 2/3 full with ice and shake vigorously until the outside of the shaker begins to frost.
Double strain into a chilled cocktail glass, garnish with extra strawberry slice and serve.
