All Betts Are Off

Featuring mezcal, sweet and herbal Yellow Chartreuse, and easy-drinking Dolin Blanc vermouth, this drink was created by Matt Lanning of The Bitter Bar in Boulder, CO to help ease customers into the taste of mezcal.

The Betts part is a nod to Richard Betts, owner of Sombra Mezcal, and the cocktail's name suggests that you might just change your opinion of the smoky spirit after tasting it. As Lanning puts it "Think you don't like mezcal? With this one all 'betts' are off."
