Notes: To make strong chamomile tea, steep 4 chamomile tea bags in 1 cup of hot water for 15 minutes, then remove tea bags. Let cool to room temperature. To make honey simple syrup, mix 1/2 ounce honey with 1/2 ounce warm water, stir to dissolve. Let cool before using.

Ingredients
- 1 1/2 ounces gin
- 2 ounces strong chamomile tea, brewed and cooled (see note above)
- 1/2 ounce honey simple syrup (see note above)
- Dash orange bitters

Add gin, tea, honey simple syrup, and orange bitters to a cocktail shaker and fill 2/3 full with ice. Shake until well chilled, about 20 seconds. Strain into coupe glass and serve.
