This filling tastes great sandwiched between two small pretzels. If you prefer, you can make "truffles" out the fillings. Simply roll the filling into balls, using about one tablespoon of cookie mixture. Chill and then dip into melted chocolate.
For Chocolate-Peanut Butter Pretzel Bites, spread a little peanut butter on the pretzels before you spread on the chocolate filling. For Mint Chocolate Pretzel Bites, add a few drops of pure peppermint oil to the food processor before processing the mixture.

- 15 gluten-free chocolate sandwich cookies (such as Glutino)
- 3 ounces cream cheese
- about 48 bite-size gluten-free pretzels (such as Glutino)
In bowl of food processor, combine sandwich cookies and cream cheese. Run food processor until smooth, about 45 seconds, scraping down sides as necessary. Spread mixture on bite-size pretzel. Sandwich with another pretzel. Repeat until you use all the filling.
