This drink—made with cucumber, fennel, celery, and green pepper—is very refreshing.
The lemon makes an appearance here to add some brightness, and I thought this needed just a bit of salt. Without it, the cucumber flavor got lost and the juice tasted flat. A small pinch of salt made a huge difference.

- 1 stalk celery
- 1/4 green bell pepper
- 1 bulb fennel
- 1/4 lemon, peeled, outer white pith and seeds removed
- 2 large peeled cucumbers
- Pinch of salt
Add vegetables and fruit to juicer in order listed. Stir salt into juice and serve.
