Ingredients
- For the Apple-Infused Gin:
- 1 red apple, cored and sliced
- 10 ounces gin, Bluecoat preferred
- ½ ounce unfiltered apple cider
- For the Cocktail:
- 2 ounces Zu Bison Grass Vodka
- 1 ounce Apple-Infused Gin
- 1/2 ounce Lillet Blanc
- Garnish: Lemon twist

For the Apple Infused Gin: Place apple pieces inside resealable jar, cover with gin, seal and infuse at room temperature for 36 to 48 hours. Liquid will turn golden and look a bit like apple juice. Strain liquid through a fine mesh strainer set in a sealable glass jar. Discard solids. Add apple cider and seal. Infused gin keeps in the refrigerator up to 1 week.

To Make the Cocktail: Pour Bison Grass Vodka, Apple Infused Gin, and Lillet Blanc in a cocktail shaker. Add ice and shake until well chilled, about 15 seconds. Strain into a chilled coupe glass. Garnish with lemon twist.
