Cucumber-Mint Raita Recipe

Ingredients

  • 1 cup plain yogurt
  • 1 cup coarsely grated seeded hothouse cucumber
  • 1/4 cup chopped fresh mint leaves
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper

Directions

    In a medium bowl, mix together yogurt, cucumber, mint, cumin, salt, and cayenne pepper. Place in refrigerator for at least 2 hours to chill and let flavors meld, then serve.
