Note: For a sweeter drink, use less lemon juice or add a dash of sugar.

- 1 1/2 ounces gin
- 1/2 ounce Laird's Applejack (80 proof)
- 1/2 ounce juice from 1 lemon
- 1 fresh egg white
- 2 dashes pomegranate molasses
- Garnish: mint sprig
Add gin, applejack, lemon juice, egg white, and pomegranate molasses to cocktail shaker. Shake dry (without ice) 10 seconds to emulsify egg white. Add ice and shake until well chilled, at least 15 seconds.
Strain into serving glass, garnish with mint sprig.
