"I think the Negroni is the best drink ever invented," says Brent Butler, the bar manager at West of Pecos in San Francisco. "If you're going to know one drink, this should be it." This variation uses Zucca Amaro instead of Campari, and mezcal instead of gin.

Ingredients
- 1 ounce Fidencio Mezcal
- 1 ounce Zucca Amaro
- 1 ounce sweet vermouth
- 2 dashes Bitter Truth mole bitters
- Garnish: orange twist

Fill a mixing glass with ice. Add mezcal, Zucca, sweet vermouth, and mole bitters. Stir until well chilled. Strain into an ice-filled rocks glass and garnish with orange twist.
