Pork Chops with Norman Cider Cream Sauce and Thyme

This is one of the best, fastest, and most satisfying dinners I've ever made: lean pork chops, seared with fresh thyme, finished in a sauce of just dry apple Normandy cider and a splash of cream. That's it! Add fresh gnocchi and a salad on the side, and there's no better, Frencher dinner.
